I plan on making italian chicken and with it i wanted to make noodles w/ cucumbers and tomoatoes....with either oil and red wine vinegar or should i just do it with italian dressing to keep it consistent with the marinade? Does this seem like a bad idea?

Just add a bit of dried Italian herbs to the dressing you will be using to marinate the chicken to make it a little different.

Some suggestions: oregano, basil, garlic, chili flakes, onion powder, more black pepper

When you make the salad, you can use the dressing as is or sprinkle a little grated parm. over it.

Italian dressing would be nice but I would change the cucumbers to zucchini.

Either dressing will work nicely with your entree.
