What do philly cheesesteak experts in restraunts use on their grill instead of oil?

They start with a squirt of plain old vegetable oil until the grill is seasoned. After that they do not need any more oil.

They don't?
I would imagine that the start off with some oil, but after the beef starts oozing you don't need anymore.

Just good old grease I think , but I know some put the steak down on top of onions so it doesn't overcook.
