You can actually drink it any time. However, the longer you age homemade wine, the stronger it will be. Depends upon your preference. Open a bottle after a specified time period, and if you want it stronger, wait a few months before opening another bottle.

It really depends on how it is made and using what products from what companies. I use one company that makes very drinkable wine in 28 days. Yes, it seems to get a little more mellow if you age it more but it will also reach a peak and I believe most of these " kits" are intended to be drank within a year.

Another company I use calls for their wines to be complete in 6-8 weeks.

If you made it correctly and aged it in carboys long enough for it to become wine then you can drink it while you are bottling it. Once you have turned the grapes into wine its wine. It will get better with age if made and stored properly.
