This works for me:
Boil the potatoes till they're soft, drain & put back in the saucepan. Then put the lid on and shake it like mad. Cover in flower & shake again. Scoop them out and put them in the oven covered in oil...YUUUUMMMMYYYYY!!!!!!

Put a sheet tray in a 450 degree oven fro ten minutes so that it gets really hot. Cut your potatoes and toss generously with olive oil. Take the hot pan from the oven and dump the potatoes onto it. You should hear a searing sound. Spread them out so that they are not stacked on top of each other. Extra oil on the pan is a good thing. Put the tray back in the oven and keep the temperature high. After 15 minutes or so, move the potatoes around. Continue cooking until golden. The key is to use a hot oven, hot tray, do not stack them, give them room on the pan, use a decent amount of high quality oil, and roast long and hot. Salt only at the end when they come out of the oven.

choose maris piper or king edward peel then boil them for 10 mins meanwhile heat half inch of oil in roasting tin and put in oven on gas 7 to heat. drain the potatoes and shake the colander to rough them up a bit. then put into hot oil cook for about an hour they should be crispy on outside and fluffy on inside.

Par boil them for 15 minutes. Then drain really well and shake like mad in the pan to fluff the outside up. Put into a baking dish with smoking hot dripping and make sure they have all been coated. Lightly sprinkle with either normal sea salt or garlic salt, then cook in a hot oven gas mark 6 until golden brown, yummy!

Put your oil in a baking tray and put in oven (about 190 degrees) to get it nice and hot. Peel pots and cut into even sized chunks (medium pots cut in half and bigger ones into 3). Par boil for 8-10 mins. Drain and leave in pot with a t-towel over them to draw out moisture. Give them a good bash around in the saucepan by shaking with the lid on. Then, and this makes the difference, sprinkle over a couple of tablespoons of plain flour and toss them around. Take tray out of oven and put on a medium hot hob to keep oil hot. Tip in pots and give a good coating of oil. Put in oven for about 45 mins checking, basting and turning 2-3 times. Perfect!

Parboil them and when you drain them, give them a good shake in the colander. Make sure your fat (I use lard) is really hot in a decent sized baking tray. If, when you put the potatoes in, they don't really sizzle and spit, the oil/fat is not hot enough. Put on a high heat and baste once or twice and leave them until they are nice and brown and crispy round the edges-delicious.

Peel potatoes. prick with fork, microwave for ten minutes. Put in roaster, cover each potato with olive oil. Cook as usual. Serve with New Zealand Lamb. pumpkin, brussel sprouts, kumera, and the potatoes. Yummy! Don't forget some delicious Rum & Raisin Ice Cream. And of course Perc coffee. If your making, can I come?

My wife part boils the potatoes first, then if you are having a roast meat, baste the potatoes with the fat from the meat, then sprinkle a bit of salt.
