This is his favorite. Not mine. It does not have to be a really big cake.

INGREDIENTS
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans

1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake

Well...I never thought there was an easy recipe for carrot cake, and that's why it was always so expensive to buy. I hope somebody has one. See if there is a spice cake mix, and add finely grated carrots and applesauce to it. I know that you can replace the oil in a cake mix with applesauce and that it comes out nice and moist. That's about as easy as I can think. Even if they have a boxed carrot cake mix, throw in a little applesauce and grated carrots. I would think it'd be a good way to distract from the processed taste of the cake mix.

Buy a box of carrot cake mix. Add about 1/4 c. fresh grated carrots, a tsp. of ginger (fresh or 1/2 for dried) and 1/2 c. chopped walnuts. Krusteez makes a really good mix. For the frosting 2 packs of cream cheese, 1 stick of butter and 2 cups of confectioners sugar. I like to add 1 capful of vanilla, but I am not sure if it traditional or not.

Carrot Cake

2 cups white sugar
2 cups flour
2 tsp baking soda
2 tsp. cinnamon
1 cup oil
4 eggs
1 tsp vanilla
pinch of salt
3 cups shredded carrot

Mix sugar, flour, baking soda, cinnamon. Beat oil, eggs, vanilla & salt together. Combine dry ingrediants with oil/egg mixture & carrots stirring until just blended.
Pour batter into greased & floured: 2 round cake pans or a bunt pan or an angel food cake pan.
Bake at 325 degrees for 45 - 60 minutes. Remove from oven and cool.

Cream cheese Icing:
1 large pkg. of cream cheese at room temperature
1/2 cup butter at room temperature
3 1/2 cups icing surgar
1 tsp vanilla
1 tblsp. orange juice

Mix all ingrediants together & ice the cake !
