That would depend a great deal on the religion(s) of the happy couple.
At my wedding, there weren't any hymns. All the music played was secular, since we're not religious people.
If you're getting married, discuss the service with your clergyperson. He or she will be able to tell you what is most commonly used in your parish, and what variations are allowed (some churches allow secular music, while others don't).
If you are not being married in a church by a clergyperson, then you may use whatever music you please, be it religious or secular.

You are also likely to hear "Oh Promise me", and "Because" which are so worn out. Yes, I know they are not hymns. I have heard them so many times that I hate to go to weddings.
