Cornmeal (Cornbread) Mix
*STATEMENT BELOW IS FROM THE COOK WHO ORIGINALLY SUBMITTED THIS RECIPE...
I found this recipe on Recipe Gold Mine (recipegoldmine.com) after a request from another Zaar member for a cornbread mix similar to Jiffy Brand. This is a do-ahead mix that can make corn muffins, cornmeal biscuits, and cornbread with a few additions. The mix will last for 2-6 months, tightly covered (Tupperware/Ziploc bag) in the fridge.

40 muffins
30 min 10 min prep
4 cups flour
4 cups cornmeal
1 1/2 cups nonfat dry milk powder
2/3 cup granulated sugar (optional)
1/4 cup baking powder
2 teaspoons salt
1 1/2 cups shortening
Sift dry ingredients together until well mixed. Cut in fat until well blended. Place in a glass jar. Keep tightly closed in a cool place. Mixture will keep for 1 to 6 months on the shelf in dry weather. In hot and humid weather, store in the refrigerator.
Cornmeal Muffins:
-Grease 8 medium-size muffin cups.
Combine 2-1/4 cups Cornmeal Mix, 2/3 cup water and 1 beaten egg. Stir just enough to moisten dry ingredients. Fill muffin cups 2/3 full. Bake at 425 degrees F for about 20 minutes. Makes 8.
Cornmeal Biscuits:
-Add about 1/2 cup water to 2 cups Cornmeal Mix to make a soft dough. Drop by tablespoonfuls onto a greased baking sheet. Bake at 425 degrees F for 12 minutes. Makes 12 biscuits.
Cornbread:
-Combine 4 1/2 cups Cornmeal Mix, 2 beaten eggs and 1 1/3 cups water. Stir just enough to moisten dry ingredients. Pour into a greased pan, about 8 inches square. Bake at 425 degrees F for about 25 minutes. Serves 12.
Blueberry Cornbread:
-Add 1 cup fresh or partially-thawed frozen blueberries to Cornbread batter and mix gently. Bake as directed.
Cheese Cornbread:
-After turning Cornbread batter into pan, sprinkle with shredded Cheddar cheese and sesame seed. Bake as directed.

Why? I love Jiffy, and it's so cheap! Have you ever made corn waffles with Jiffy cornbread mix?
They are awesome! The other thing I love from Jiffy is their pie crust mix. Completely fabulous as it uses real lard instead of vegetable shortening.

Jiffy Corn Muffin Mix is really a recipe for what is called in 'The Midwest," Johnnycake"! It is a sweetened cornbread in cake or muffin form! Any good on-line Recipe. com will have it! I like Allrecipies.com!

That's an easy one. At the grocery, find the large bags of corn meal. They will usually have recipes on the bag, so you will find out what other ingredients you need. Generally, that would be corn meal, white flour, eggs, milk or water, butter, buttermilk powder, salt, baking powder, baking soda and vegetable oil. An iron skillet is a great tool for making excellent corn bread. Spend a little more at first to get your ingredients. They will last a long time and you spend less and get healthier food in the long run. Here's a recipe...
INGREDIENTS:
* 1 tablespoon vegetable oil (canola is best)
* 2 1/2 cups white cornmeal (I prefer yellow corn meal)
* 1 cup all-purpose flour
* 2 teaspoons salt
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1 cup buttermilk
* 1 cup low-fat milk(I like whole milk better)
* 2 large eggs
* 2 to 3 tablespoons melted butter
PREPARATION:
Preheat oven to 400°.Add about 1 tablespoon of vegetable oil to a 10-inch seasoned iron skillet; place in oven.
In a mixing bowl, combine the meal, flour, salt, baking powder and soda.
In another bowl, whisk buttermilk and milk with eggs and melted butter. Gradually fold milk mixture into dry ingredients, folding and mixing just until all dry ingredients are moist.
Using oven mitts or potholders, carefully remove the hot skillet from the oven; swirl slightly so oil coats sides of pan. Pour batter into the skillet then return to oven. Reduce heat to 350°. Bake cornbread for 35 to 45 minutes, until it pulls away from sides of pan and is lightly browned.
Cut into squares or wedges.

i use this recipe when making hush puppies i do not see why you could not use it for jiffy
1 cup cornmeal
1/2 cup golden cake batter
1 egg
milk whatever texture you need thickier for hush puppies
I even add fresh jalepeno's to this and onion it is great

If you have the cornmeal there should be a recipe on the box or bag that tells you how to make it from scratch. If you don't have the cornmeal, you need to get some before you can make it from scratch - unless you plan on drying and grinding your own cornmeal.
