I would suggest after you sautee everything you take it all out of the pan, add some butter, pour in your rice and sautee it for about a minute or 2, constantly stirring it so it doesn't burn. Then dump in your water - chicken stock adds more flavor - then add your meat and veggies, cover, and simmer about 20 minutes. I think the rice will turn out much better this way. That's how I do it.

Fine. Sounds a lot like cajun Jambalaya.
Use almost twice as much water (or stock! Mmm!) as you do dry rice. And use a tight-fitting lid to steam it for 20+ minutes.

It does sound pretty good, but I would have left out the pork and ham, only because I don't eat pig. hahaha enjoy it though!
