Almost everyone loves a honey glazed ham. It's festive and easy to transport and reheat. Make some homemade mac-n-cheese and a nice salad.

Well if its as hot there as it is here I would look at some sort of warm main dish and some salads.
"Fried" chicken might be nice as you can make a huge batch and it can be eaten warm or cold. Roasts (pork or beef) the same, they are a little trickier to reheat but it can be done, and of course sliced for sandwiches the next day. Schnitzel is also good warm or cold and easy to reheat. Roast chicken or turkey is nice, and carved up it reheats well, probably better than roasts of beef which many prefer rare. My family picked me up those grocery store roast chickens a lot after I had my baby and it was nice, homemade would be nicer though as those grocery store ones tend to be quite fat.
Veggies and dip can be nice, with hummus or a sour cream dip.
Roast potatoes and roast veg reheat well. Oven roasted cauliflower is very nice, most people never think to roast it and it has a different flavour than when boiled/steamed. Nuttier.
Kebobs can be cooked quickly if they have a BBQ.
Nice bread or rolls are always nice.
If you are going to do a casserole I would go with the lighter ones that are more veg than meat, and more tomato than cream. At least that's my preference in the heat.

I would just stop at a local Boston Market or KFC and pick up a meal on the way. Or you could order a couple of pounds of BBQ and all the sides from you favorite restaurant at home. Pack it in a cooler and bring along some buns, chips, and sauce. BBQ reheats really easily and most people like it. This will be much easier than preparing a meal and taking it with you!

Easy Chicken Divan
An easy chicken casserole with broccoli and Parmesan cheese.
INGREDIENTS:
1 can cream of mushroom soup, undiluted (reduced fat)
1/4 cup half and half
1 1/2 to 2 cups cooked, cubed chicken
2 tablespoons melted butter
1 tablespoon sherry or white wine, optional
1/8 teaspoon ground nutmeg
1 package (10 ounces) frozen broccoli spears, cooked and drained
grated Parmesan cheese
PREPARATION:
Combine soup, half and half, chicken, butter, sherry and nutmeg. Arrange broccoli an a shallow casserole; top with chicken mixture. Sprinkle with Parmesan cheese. Bake at 450° for 20 to 25 minutes, until hot and bubbly.

Taco Casserole
1 pound of hamburger
Chopped onion to taste, (I usually use one whole onion per pound of hamburger)
1 can cream of Chicken Soup
1 can Tomato Soup
1 can chopped chillies.
1 cup shredded cheese ( I use Colby Jack you could use Cheddar)
Flour Tortillas
1/4 cup milk
Brown hamburger with onion. Drain fat and rinse with hot water in colander. Return to skillet. Stir in both cans of soup and can of chopped chillies.
Reheat.
Use an 8x8 dish layer flour tortillas in bottom. Add half of hamburger mixture, Add another layer of flour tortilla. Add remaining hamburger mixture.
Spread grated cheese to top.
You can prepare this in advance then bake when you get to your cousins house. Easy dish to double and bake in a longer baking dish.
If the oven is gas pour the milk over the top and bake at 350 degrees until cheese is melted. If oven is electric don't use the milk and bake at 350.
This is good with corn on the cob and Texas Toast. Maybe add a tossed salad if you want.
If you wanted Mexican Rice......
1 cup of uncooked rice.
enough oil to cover bottom of skillet.
Heat oil then add in rice. Cook until rice turns whiter. Add 2 cups water cover and cook twenty minutes. Uncover and add 1/4 c Pace Pecante Sauce.

lasagna & garlic-cheesy bread with some salad
* lasagna baked ahead of time, so you can reheat once you get there, bread just buy baguette and prepare it over at their house so is nice and crunchy, salad just buy a bag of mixed greens and bring a nice vinagrete
*also a nice chicken cacciatore and some rice
*pot roast with potatoes and carrots w rice
* bring some bolognese sauce and cook the pasta @ their hose then reheat and served with some bread
* rice & beans some rosted beef o chicken

Fish is great for mothers who just had babies because of the omega 3 fatty acids. I would go with salmon. Just season both sides with salt and pepper andsaute on both sides with olive oil. Serve with a mango salsa that consists of mango, red onion, cilantro, cucumber, tomato, jalapeno (if she likes spicy food), lime juice and salt. You could have a simple rice pilaf and some green beans sauteed in a little butter, garlic, salt and pepper and topped with sliced toasted almonds for side dishes. For dessert, you could make banana parfaits with layers of Nilla wafers, banana pudding, chopped pecans and sliced carmelized bananas topped with whipped cream and a sprinkle of chopped pecans. prepare stove top as it says on box
than pour it over the sourcream,chicken & soup mixture
