Bake it. You can use lemon, herbs, or any number of seasonings to add flavor without fat. If you have problems with it drying out, cook longer at a lower temperature and/or add some fat free chicken broth to help keep in moisture. All sorts of recipes are available online. Avoid marinating it in premade sauces or salad dressings because there are oils in those.

If you like to brown it on the stove, you can use cooking sprays. That way you only use a minimum of oil to keep it from sticking. Rather than using Pam or a similar store bought spray, I recommend an oil mister so you can use your own oil as a coooking spray. Not all oils are created equal. Olive oil, safflower oil, canola oil, and most other plant based oils are actually good for you --- in moderation.

This works for me. I take out a frozen, boneless, skinless chicken breast out of the freezer, put it on a pan and bake it at 375 degrees until clear juices start to run out of it. I've never experienced the breast drying out and it's always been as juicy as ever.

I like my chicken plain, without sauces or butter or seasoning. It's the healthiest way.

I have just made Chicken for dinner tonight Recipe for 4
4 chicken breasts bash well with a rolling pin or steak
tenderizer lay separately on top of cling film for the filling
spread each chicken breast with Philadelphia cheese with garlic then roll up into something that resembles a sausage
roll shape and twist at each end then lay on top of tin foil
and again twist each end tight put in fridge over night or
maybe an hour before filling a pan with enough water to cover
and poach for thirty minutes and you will have the most succulent chicken dish ever let me know how it turns out

Try the Cajun way. Inject the chicken with your favorite marinate, then follow Tara c answer. I actually love to smoke whole turkeys and chickens slow cooking overnight but not many can do this in everyday life. Here is a special cheat with crock pot.
Place a earthenware cup or small metal pot upside down in a crock pot. Add water until level is 3/4 the way up the cup or pot. Add 3 tablespoons of Italian dressing to the water. Place chicken on top of cup or pot so its not in the liquid. (Season the chicken your way first I inject mine). Cook on low and go to work or make whoopee, something while it cooks slow.

steaming the chicken would be the best way to retain moisture. Otherwise if you use no oil to cook something that is very lean like skinless chicken then it can really dry out.

Other options would be to cook it in liquids. Make it in soups, stews, simmered in broth.

Season the chicken which way you like and wrap it tightly in a foil pouch. Cook in the oven at 375 for about 20 - 25 minutes. It will still be juicy. I do this about once a week, I flavor them with chinese 5 spice, mexican seasonings, and italian seasoning. I wrap them all individually, then toss them in rice, pasta or in a salad. The key is to leave them in the pouch for about 5 minutes before you serve it, or if you are going to pop them in the fridge, let it get to room temp.

I'm assuming you mean a breast. Put it in foil, cover it with crushed pineapple, add some raisins if you like, sprinkle with ginger powder, sliced fresh ginger or chopped candied ginger, seal up foil by crimping edges. Bake at 350 for about half an hour, depending on thickness (if they're very thin 20 min. will do it). Have with brown rice & steamed veggies. Very low fat, healthy & delicious!

For one breast: mix two teaspoons dijon mustard, two tablespoons honey, and one tablespoon white wine vinegar. Marinade the chicken for 30-60 minutes, and then grill it for about 12 minutes. The chicken will be nice and flavorful, and it goes great with rice and steamed green beans.

You could boil them in water or chicken broth. Best way for moist chicken that tastes good.

You could also package them in parchment paper, with some herbs and vegetables, and bake them.
