Hi !!!
I would recommend this sandwich...
Cashew Avocado Chicken Salad Sandwich
"Try this chicken salad when you really want a treat! This recipe makes sandwiches - but it can be served over lettuce as an alternative."
Original recipe yield:
6 sandwiches
PREP TIME 20 Min
COOK TIME 10 Min
READY IN 1 Hr
INGREDIENTS:
4 cooked, boneless chicken breast halves, shredded
1/3 cup prepared Ranch salad dressing
1 1/2 tablespoons chopped fresh dill
1 cup cashews
1 avocado - peeled, pitted and diced
salt and pepper to taste
12 slices bacon
6 slices Swiss cheese
12 slices bread, toasted
DIRECTIONS:
In a large bowl, mix the cooked chicken, dressing, dill, cashews, and avocado. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown; drain.
Spread even amounts of the chicken mixture on 6 slices of toasted bread. Top each with 2 slices bacon and 1 slice Swiss cheese. Top with remaining bread slices to make sandwiches.

Preheat oven to 350. Take a Kaiser roll and cut it half. Put dijon mustard on one half. Top the mustard with lunchmeat and a slice of cheese. Leave the other half plain. Place both halves on a cookie sheet and leave in the oven until the cheese is melted. Add extra toppings, put the top on and enjoy. Salami, turkey or chicken is good with mozarella cheese. When you take it out of the oven add some sliced tomatoes or roasted red pepper and a couple of pieces of basil. If I have guacamole or salsa, I use either turkey or chicken and cheddar cheese and then put the guacamole and salsa on top once I take it out of the oven. (This does make the sandwich a little soggy but still tasty.) Ham is good with either swiss or cheddar cheese and a little honey mustard on the top. The best part of the sandwich is the crunchy roll and the hot melted cheese. You can pretty much put whatever you like on it.

Think about what flavors you like to eat, what textures the food has and the kinds of bread. What have you eaten and enjoyed in sandwiches before? Hot or cold? Sub bread, rolls or loaf? Now look at what you have in the kitchen. Then use your imagination, something tasty should pop into your mind.
My personal fav is ham, swiss cheese and a thick tomato slice on a toasted english muffin, with Duke's mayo on the muffin. Ummm. Want one now.

Tarragon Tuna Melt Recipe
1/3 cup mayonnaise
3 Tbsp chopped fresh flat-leaf parsley
1 thinly sliced green onion, including the greens
2 Tbsp chopped fresh tarragon leaves or 2 teaspoons dried tarragon, crumbled
Zest of one lemon
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/8 teaspoon freshly ground black pepper
2 6-ounce cans of solid white tuna, well drained and flaked
8 1/2-inch slices French or Italian loaf bread (or your favorite bread)
1 tomato, sliced thin into 8 slices
4 ounces sharp white cheddar cheese, grated (about 1 cup)
2 Tbsp butter, softened
1 In a medium sized bowl, mix the mayonnaise, parsley, green onion, tarragon, lemon zest, lemon juice, Dijon, and black pepper. Add the drained tuna. Mix with a fork to break up the flakes.
Lay out 4 slices of bread. Evenly divide the tuna mixture onto the slices. Top each with tomato slices and grated cheese. Spread one side of the remaining 4 bread slices with butter. Place bread slices, buttered side up, on top of the cheese.
Heat a large griddle, or couple cast iron skillets, on medium heat. Place sandwiches, buttered side down, onto the hot griddle. Gently butter the top bread slices. Cook for about 3 minutes, or until nicely browned on one side, and then use a metal spatula to lift up the sandwiches and carefully turn them to the other side. Cook for another 3 minutes or so, until the second side is browned.
Slice in half if you want. Serve immediately.

This is so very unhealty but soooo good. Make a grilled cheese sandwich, but fill it with bacon, turkey, tomatoes and russian dressing. YUM!
Another favorite of mine is fresh mozz, tomatoes, and fresh basil in a panini press, or you can just toss it in the oven. The key with this is seasoning. You need salt and pepper. If you need meat a slice or two of prosciutto will do it.
Finally, Cubano sandwiches. A slice of ham, baked pork, pickle slice, and swiss cheese on both sides. Again a panini press, or oven will do it. I like mustard on mine.

An everything-in-the-fridge sandwhich I always find to be most delicious. Just grab everything you can and stick it in a roll or a sandwhich. I personally prefer rolls. Or a baguette...?
