A simple to make flapjack that is sweet, moist & chewy
Ingredients
Porridge (chopped rolled) oats 125 g
Rolled oats 125 g
Margarine 150 g
Golden syrup 75 g
Sugar 75 g
Equipment
Oven. Hob & saucepan (or microwave oven with microwaveable bowl). Knife, chopstick, wooden spoon or similar (to mix ingredients with). Pallet knife (to press into cake tin with). Scales & spoons (or just estimate). Square shallow baking tin about 20 cm sided. Greaseproof paper.
Detailed Instructions for Chewy Flapjack
Put the margarine, sugar & golden syrup in saucepan (or microwaveable bowl if using a microwave oven) and heat until it is all liquid.
Meanwhile line the baking tin with greaseproof paper.
Mix all the oats into the liquid.
Put the mixture into the baking tin & press flat.
Bake at 175 deg C (Gas Mark 4) for 25 to 30 minutes. Warning: the timing is tolerant but accuracy in temperature is critical.
Slice into 8 fingers (by cutting into half along the perpendicular bisector of two sides and into quarters perpendicular to the first cut) before it sets but leave in place in tin.
Leave to cool and set.

Here is my favorite.
Flapjacks
2 cups all-purpose flour
1/4 teaspoon salt
1 1/2 cups apple juice or milk
2 tablespoons vegetable oil
2 large eggs
1/2 cup honey
2 teaspoons baking powder
1 tart green apple, peeled, cored and grated
Combine all ingredients, except the apple, with an electric mixer. Stir in the grated apple and mix by hand.
Heat griddle or skillet over medium heat or to 375*F (190*C). Grease griddle with shortening. Griddle is ready when a few drops of water bubble and skitter rapidly around.
For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown.
Makes about 12 (4-inch) pancakes.

40 min 5 min prep
6 ounces butter
8 ounces rolled oats (quick cooking)
6 ounces brown sugar
1 pinch salt
Melt butter in saucepan over very gentle heat.Mix in the sugar, oats and salt.Stir well and turn mixture into greased swiss roll tin and press lightly together.
Smooth top surface with the back of a metal spoon and bake at 190C for 30-35 mins in centre of oven.
When golden brown remove from oven and allow to cool for a few minutes before cutting into square slices.
Cool completely before serving.

This is the easiest Flapjack recipe I know.
75g butter
75g demerara sugar
100g rolled oats.
Grease a shallow 19cm square tin. Cream the butter. Mix together the sugar and oats and gradually work in the creamed butter, until thoroughly blended. Press evenly into the prepared tin.
Bake in the oven at 220c (425f) mark 7 for about 15 minutes until golden brown; turn halfway through, to ensure even baking. Cool slightly in the tin, mark into fingers with a sharp knife and loosen round the edge; When firm, break into fingers. You can store them in an airtight tin for about a week. Makes about 12

FLY AWAY PANCAKES
1 cup flour
1 tbs baking powder
2 rounded tbs sour cream
1/4 tsp salt
1 egg
2 tbs butter (melted)
1 tbs sugar or sugar substitute
Mix all ingredients and cook on heated griddle until tops become bubbly all over, flip over and brown other side. Watch them rise in the pan!!!!

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

6oz of porridge oats 4oz melted margarine or unsalted butter 2oz unsalted nuts preferably peanuts
method get a bowl put your porridge, nuts broken up and melt the butter or marg in a saucepan pour it over the porridge etc mix well until it is all together put it in a long baking tin cook until the porrriidge etc is cooked make sure its soft let it cool then cut into squares
