The ignorant definition of this means that you won't accept anything unless you have SEEN it with your own EYES. But that is an incredibly narrow, clumbsy way to define it. You can't SEE gravity -- only how it affects things. Does that mean you shouldn't believe in gravity? No one has ever seen electrons, we can only infer their existence because of the way they interact with other things.
What the saying really means, then, is that you don't jump to conclusions about something until you have EXPERIENCED it first hand. You don't rely on a person's testimony about something (Pineapple is nasty!) until you have tried it for yourself, first hand (I like pineapple!).

In order to see something, you must have faith in order to believe it. Example: God saves hundrends from a freak train accident. Noone gets hurts and everyone is ok. In the back of your mind, you think everyone is dead because of the wreckage.

"Seeing is believing" rejects the concept of blind faith.
It would rather not support something unless there is some hard evidence to indicate that the point of view is correct.
EVIDENCE is not necessarily the same as PROOF.

means, u dont believe something exists unless u see it.
that tangible evidence is the only real form of proof.
for instance, i wouldnt believe a 3 headed purple and pink unicorn existed unless i saw it. =]
