Most mallets have a solid end and the other with ridges and the solid end is uded to pound meat to make it thinner and usually would do that for chicken to make the chicken brest meat thin like a culet and quicker cooking, the ridged end is used to break down the tissues of meat such as beef to help tenderize it.

It not only tenderises meat but makes specific meats into fillets pieces and prepares them for breading. Some people crush the breadcrumbs onto the fillet with the mallet. Flattening the meat also shortens cooking time.

well it tenderizes the meat and
thins it out so you can fill the meat with things
EG..
get a chicken breast and cut it in half
then place it on plastic wrap and cover lightly with plastic wrap
then pound away until it thins out and spread wider
dice , carrots, onions, mushrooms, salt and peper to taste
separately
dice sundried tomatoes, and dried apricots with feta cheese
now use about a 4 table spoons of olive oil in a pan
place the carrot mixture in the center of the smushed chicken
and wrap, place it in the pan with the open side down to hold the ingredients inside
then do the same to the Feta mixture
bake in the oven til golden brown on 350 degrees
should take about an hour or so.
its gonna be tasty....

sure, like all and sundry pronounced. something heavy. I even have used a large stainless-metallic cooking spoon. yet whether you do use parchment, nonetheless wrap the rooster in plastic wrap or a large Zip Loc bag so as that the juices do no longer splatter everywhere and a threat reason a well-being concern. good success!

To flatten meats so that you can fill and roll them. A good example is to flatten a chicken breast, layer cheese, basil, etc ontop then roll to close. Wrap with bacon and grill basting with terriaki.....super yummy.
