some say dont drink water,let it cool down by it self... what is the best way you think?

Chilli disssolves in fat, not water, so you need a fatty liquid. Full fat milk is a good idea or you could try Lassi or serve the food with yoghurt....or a cucumber raita ..that would be very cooling. If the situation is an emergency you could pop a knob of butter in your mouth.

Oh and ice cold beer..it will have no effect on the chilli but it's a great excuse...

Not being that fond of milk I have found great (actually really great) results with hot liquids such as tea or coffee. The cold temperature of the milk (or water or iced tea, etc) makes the taste buds on your tongue close up, trapping the spicy hotness of what you are eating inside so that it cannot be washed away. Drinking hot liquids keeps the taste buds open so that the fluid can easily wash the burning away.

If you don't have milk but have a container of plain yogurt take a spoonful of that and put it in to your dish and mix it in. The acid of the yogurt helps to cool down some of the heat. They also do this for Middle Eastern and Indian (from India) dishes if you find that things are too hot when it comes to spice level.

Doesn't taste nice but very fast and effective!

Dilute equal parts of water and white vinegar. Swirl mixture in mouth until burning sensation starts subsiding.

Milk is great, but honey works wonders! If you are in a restaurant that serves the sopapillas with honey, eat one! That is a great way to stop the burning.

Don't drink fluids. Use the traditional method: roll up a buttered flour tortilla and bite into it. Chew, swallow, and chili burn is gone.

My dad would get drunk with his pals when i was younger and they would rub hot peppers on our lips and I always remember mom yelling at them telling him to get us milk and bread also works.
But now I love spicy food and I can almost eat anything.
