just by boiling lets say broccoli you almost double the amount of carbs why is this?

ok if you go on this site http://www.calorie-count.com and check the carbs for "raw uncooked" broccoli and the carbs for "boiled unsalted broccoli" you'll see how the boiled carbs has alot more carbs.

I do not believe this is true. What is the source of this 'fact'. Heating can breakdown some long-chain carbohydrates into shorter, more easily digestible carbohydrates. But energy and matter are conserved in our universe, so no net gain in carbohydrates is possible - only a change in form. Heating cannot make something out of nothing. If this does happen, you have solved the world's energy crisis!
