Cover your egg(s) with cool water. Cover and bring to boil. When boiling start turn off heat and let set 15 minutes. Poor off hot water.....crack the shell and then cover with cold water, when the water warms again pour off the water and replace with cool water. Doing it this way makes the egg easy to shell.
Now slip off shell and enjoy. Also use older eggs for hard boiled eggs.....the fresher the egg the harder it is to peel.
If you cook an egg to long the yolk turns green on the outside so do not leave it in the hot water over 15 minutes. Putting it in cold water stops the cooking.

hard boiled eggs... Just your egg or eggs in a pot and cover with cool water. Turn the fire on and leave the eggs there, when water starts boiling count 10-11 minutes. When that's done, take the eggs out and pour cool water over them until you cool them down... That will stop the inside cooking and make it easier for you to shell them. If you leave them cooking for longer the minerals in the yolk start to burn and that's why it goes dark. You can eat it but presentation wise it doesn't look that good...

12 -15 minutes
place eggs in pan cover with cold water.
heat uncovered until water just BEGINS to boil, NOT beyond.
I set timer to 7 minutes and then check; usually close w/ 1 qt pan
remove from heat and cover; let stand 12-15 mins.
drain pan and fill with ice and water; let stand for 5 minutes.
[this] stops the eggs from continue cooking
tap the shell on the sink edge/ roll between palms to loosen
peel under running water, beginning at large end.

I put the eggs in a pan of water, put it on the stove, bring the water to a boil, then let it boil 5 minutes or so. Then I turn off the burner and let it sit for 10 or 15 minutes and rinse with cold water then refrigerate.

cover, remove from stove.
let sit 12-15 minutes.
dunk in ice bath to stop cooking process.

The best way is put your eggs in a pan of water with a dash of salt, bring the water to a rolling boil, turn the heat off and let them set 20 minutes......they are always perfect. The yellow never gets that greenish hue either. They will cook faster of course but this is fool proof and works well.

AFTER they start boiling then time them for 5 minutes. They will be hard boiled. Be sure to run cold water over them. I crack mine over the cold running water and let them set in the cold water for a bit. (some people do not recommend this but I put lots of salt in my water when boiling my eggs. It helps the shells to slide right off.)

What I do is once it comes to a boil I put a lid on it and turn it to low or off for 12 minutes. Then it's done!

If you want hard boiled (everything is solid), boil it on high heat for 25 minutes. Keep the water line always above the eggs.
After 25 minutes, take the pan and place it in the sink. Turn on the cold water on high and let it run into the pan. This is to stop the cooking process as even if the outside feels cool, it will heat up again as the middle of the egg is still very, very hot.
After about 3 minutes of high flow of cold water, turn it down to just above a drip (thin stream) and let this run for about 30 minutes.
After the 30 minutes, they are ready to be peeled.
