9 DAY CUCUMBER PICKLE

Use small cucumbers cut into half. Fill stone jar with 3 gallons cucumbers.
1st day make a solution of 1 cup salt to 1 gallon of boiling water. Pour over cucumbers in a stone jar, be sure all cucumbers stay under water; cover and leave 3 days.

4th day drain cucumbers and make a new solution of 1 gallon boiling water and 2 tablespoons powdered alum. Pour over cucumbers. Let sit 2 days.

7th day drain cucumbers. Then make solution of 1 cup sugar to 1 cup vinegar. Place small amount of mixed pickle spice into a bag in the solution. heat to boil. Pour over cucumbers. Let sit 2 days, and if you can't get to it the 2nd day it will not hurt it to stay 3 or 4 days.

9th day reheat vinegar solution. Pack cucumbers in jars. Cover with hot solution. Seal.

Sorry, the recipe I have from my grandmother and make every year is 12 days. If you want a recipe for sweet pickles that takes that long, put up another question. I also make Bread and Butter pickles that I start in the morning and can at dinnertime. I don't want to take the time to type a recipe with full instructions if it's not the right type of recipe for you. I'll watch this area for the next couple days.

By the way, I also make Chili Sauce every summer when the tomatoes and peppers are all ripe. Normally Labor Day weekend, but this year it will be this coming up weekend.
