As a vegetarian, I often use portabello mushrooms or eggplant as a meat substitute. Grilled portabellos make a great "burger" or you can mince them to make tacos, burittos, etc. Beans are also a good substitute. I like "caviar" lentils, which are tiny, firm black lentils. I mince up onions, mushrooms, and the lentils to make a mock meatloaf that is awesome. Eggplant, grilled or added to a stew is great too.

Yes, mushrooms. I have made a meatless spaghetti sauce using small whole mushrooms so they were like meatballs. Eggplant doesn't have the same texture as meat, but it is great in eggplant Parmesan.
