I have a recipe, but I was wondering if anyone had an Amazing recipe! Perhaps with pecans, or chocolate chips. Thanks! :P

Banana Bread with Pecans

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners' sugar, for dusting


Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
In a large bowl, combine the flour, baking soda, and salt; set aside.

Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.

Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.

Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners' sugar, and serve.

I have a terrific recipe for Banana Nut Bread (Nuts are optional). Here it is:

2 c. flour
1 tsp. Baking Soda
1/4 tsp. Salt
6 Bananas, mashed
1 Stick Margarine
3/4 c. Brown Sugar, packed
2 Eggs
1 c. chopped nuts (cashews, pecans, walnuts, etc.)

Mix together flour, soda and salt. In separate bowl, cream margarine, and brown sugar. Add 2 eggs and beat until well mixed. Add to flour mixture; then add bananas and nuts. Stir well. Bake in greased loaf pan at 350 degrees for about an hour. Check loaf after 50 minutes of bake time, when toothpick inserted in center comes out clean, bread is done. If not done, continue cooking checking every 5 minutes. Cool on cooling racks, slice and eat. Enjoy.

This is also an easy recipe if you need to half it. You may also substitute flour, soda and salt with self-rising flour. This is the best banana recipe I've ever eaten!

I have a basic recipe, but everyone seems to love it. They call it my banana cake, because I usually add one more banana than called for in it:

1 1/2 C all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
3-4 bananas, half-mashed so there are still some pieces of banana left
3/4 C sugar
1 egg
1/4 C vegetable oil

Preheat oven to 350F. Grease or spray bottom and 1/2-inch up sides of an 8x5 or an 8x4 bread pan

Whisk together flour, baking powder, baking soda, and cinnamon in a large bowl, and make a well in the center. Set aside.

Stir bananas, sugar, egg and oil until combined. Pour wet mixture into dry mixture and fold until JUST combined. Do not over-stir! Pour batter into bread pan and bake in 350F oven for approximately 45-50 minutes, or until a toothpick inserted NEAR CENTER (not in center) comes our clean.

Let cool 10 minutes. Remove from bread pan and let cool completely. Wrap in plastic wrap and let sit 12 hours before eating.

You can always add whatever you want to this: small pecan pieces are good, as are mini chocolate chips. I would fold about 1/3-1/2 Cup into the finished batter before pouring it into the pan and baking. If you start with a good recipe, the add-ins are just icing.

This recipe is from my great-grandmother who passed it to my grand-mother who passed it to my mother and I passed it to my son. All the cousins make this recipe as well because it's so good. Enjoy!

BANANA BREAD

1 c granulated sugar
1/2 c butter
3 beaten eggs
3 mashed bananas
3 T sour milk
1/2 c chopped nuts
2 c flour
1/2 tsp salt
1 tsp soda

Sift together the flour, salt and soda. Set aside. Cream together the sugar and butter. Beat in the eggs and mashed bananas. Add the sour milk and flour mixture. Mix just until combined. Pour into a sprayed loaf pan and bake in a 350º oven for 45-50 minutes or until a toothpick comes out clean.

For my bananas, whenever I have one left over and not enough to make the banana bread, I freeze it in it's peel. When I have enough in the freezer, I defrost in the microwave, peel and dump the banana slush in a cup and mash it. All relatives want mini loaves of this at Christmas time. So do all my friends.

The best I have ever made (And I have been in food service for over 20 years) is from the Betty Crocker cookbook. You can substitute pecans for the walnuts if you wish.
