********IRISH MYSTERY CHICKEN
4 slices ham (luncheon)
4 whole chicken breasts, split, boned & skinned
1 can condensed cream of mushroom soup
1 c. sour cream
1/2 c. Irish mist or Kahlua
1 c. sliced mushrooms or more if desired
In an 8"x12" baking dish, arrange slices of ham on bottom, on each slice place 1 chicken breast, skinned side up. If large slices of ham, cut in half. Mix remaining ingredients and spoon over chicken covering completely. Bake in preheated oven for 1 hour at 350 degrees. Serve over wild rice.

THIS IS SO GOOD!!!!!

Hawaiian Chicken
1-3# cut up ready to cook fryer
1/4 cup melted butter
1-9 oz can pineapple slices (or chunks) I uses more
1/4 cup brown sugar
2 Tab. cornstarch
2 Tab chili sauce
1 tsp soy sauce
1 tsp salt
1/4 cup vinegar
1/2 tsp Worcestershire sauce
1/3 cup cat sup
In a shallow roasting pan, roll chicken in melted butter until well coated. Arrange pieces, skin side up, in a single layer in pan. Reserve 2 slices of pineapple for garnishing & dice the remaining. Mix the pinapple juice with the remaining ingredients. Add drained pinapple pieces. Spoon half over chicken. Cover and bake 350 degrees for 1/2 hour. Uncover & bake for 30-45 min. or longer till chicken is tender. Baste chicken occ. with sauce as it cooks. When done twist the two slices of pinapple (cut into) and place on chicken and serve.

I love fried chicken especially the thighs and drumsticks. I love to make my own recipe. First you rinse the chicken , then soak the chicken pieces in egg and milk, then coat the chicken with flour, salt, pepper, poultry seasonings( such as thyme, paprika, sage, a pinch of oregano, basil and cumin, heat the skillet with the oil that you use and cook at medium heat, covered until chicken pieces are done.

I guess bbq chicken breast that is moist is my favorite way to eat chicken. Chicken in Chinese food is also good. And don't forget fried chicken.
