I have several chicken tenders already sitting out in the fridge and I was wondering what can I make besides chicken strips. Here's what I got in the pantry: noodles, rotel, canned tomatoes, BBQ sauce, sausage, rice, flavored rice, instant potatoes and regular potatoes

You could make macaroni and cheese if you have cheese and milk.

You could also slice the potatos real thin, place on baking sheet. Brush with olive oil and sprinkle with salt and pepper(Or steak salt), then bake in oven on about 325 degrees for about 5-10 min (Depends on how thick you slice it. just watch and take out while still soft otherwise you will have potatoe chips! :)

You could also add the tomatoes to the flavored rice while it is cooking (Put in about 1/4 cup less water) and you will get Spanish Rice. If you add sausage (Cooked) it will be like a Jambalaya.

Brown the chicken in a pan then add the rotel and a little white wine or chicken broth and simmer til reduced. Stir in a little sour cream if you have it. Serve over rice or noodles with a green veggie on the side.

I would sautee the chicken then turn the tomatos into a pasta sauce (blend it up first), serve over noodles. You can chunk up the chicken in the sauce or serve it on the side.

You might get close to something like gumbo, if you use the chicken, sausage, rice, and something to thicken it.

********QUICK CHICKEN TENDER CACCIATORE
6 to 8 breaded chicken tenders
Spaghetti sauce, prepared low fat
Spaghetti
Brown chicken tenders in non stick skillet, pat excess fat off with paper towel. Cut into bite size pieces, set aside.
Prepare spaghetti and drain.
Heat spaghetti sauce, add chicken. Serve over spaghetti with salad.
