I have a few questions.

1) About how much is 6 lbs. of tomatoes? I have medium-large sized tomatoes. Just an estimated guess because I don't have a scale.

2) What's an easy way to core the tomato? I know how to scald it and remove skin, but how do I get the core out and seeds?

3) I have lots of green peppers and tomatoes, and also some cayenne peppers too. Any good recipes? And I have the cayenne's dried, so how do I add those, and how much to make it not too spicy?

Can't help you other than to say do your research. If you mess up canning tomato products you can get very sick from the results.

you can buy a tomato corer at your local grocery store. after you core you can squeeze the tomato to get seeds out. i dont think it could be too spicy. 6 lbs of tomatos are not a lot . be sure to save some for the last 5 min of cooking so you will have some chunks. you don't want it to taste like it came from new york city.

Just search canning salsa-there's lots of sites. They have recipes and safety tips to avoid food poisoning. As for coring and seeding tomatoes-after you scald and peel,cut them in half,gently squeeze tomatoes to get most of the seeds out,and cut the top core out with a sharp knife.
