I'm trying to decide what to have for dinner tonight. I have some leftover corn bread that I want to eat. I also have some tomatoes.

Extra facts: I don't like chili, and I don't want pinto beans. Please make sure it is something that is easy to make.

Do you have any suggestions for what would go well with corn bread and tomatoes?

Fried potatoes and onions. Slice onions fairly thin and slice the potatoes in cubs (not real small). Fry in a little oil (not deep frying, just pan frying) and let them brown until golden before you turn them. Turn and cook the other side til done - a total of about 20 minutes on medium. Goes really well with buttered cornbread and tomatoes.

Collard Greens and Tomatoes
INGREDIENTS:
2 pounds collard greens, washed thoroughly, tough stems cut out of leaves, cut or torn in bite-size pieces
2 tablespoons Italian seasoning, or combination of basil, oregano, and rosemary
1 can (14.5 oz) tomatoes, chopped and drained, reserve liquid
PREPARATION:
Rinse torn leaves well; do not dry. Put wet leaves in a large pan and let wilt over medium-low heat, stirring constantly. Add Italian herb seasoning and chopped tomatoes; continue to heat for about 5 minutes longer. Add liquid from the tomatoes. Heat for about 4 to 5 minutes longer, or until hot.

***I also cut up a little onion. Delicious with cornbread!!

Home made soup is always good with a slice of corn bread and some butter. Also, Turkey goes really well with mashed potatoes and corn bread, or even sheperds pie. Meatloaf seems like it might go nicley. Hope that helps!

I like green bean casserole, you fry hamburger (1 lb.) with onion, drain off grease add a can green beans,1 can cream soup( any kind) mix and put in casserole dish top with tater tots or mashed potatoes. Bake 45minutes to 1 hour at 350 degrees. Tastes great with corn bread.

Any type of veggies or dry beans goes wonderful with cornbread. We love homemade vegetable soup with cornbread. Don't laugh but I love buttermilk with cornbread.

i would fry up some hamburger, add onions, and peppers and maybe some garlic and then add a good can of baked beans. warm through and serve with the cornbread and sliced tomatoes with salt and pepper. yummm...

black eyed peas

Or my favorite..."Cornbread and Sweetmilk"
Just crumble the cornbread into a glass of milk and eat it with a spoon. It's heaven! You can slice the maters and eat them as is. mm!

Bake a chicken, and make cornbread dressing. I'm sure you can find a recipe on the 'net.
