you have to time it out. if the meat needs all day, you should only cook the veggies for the last say 2-3 hours. I pan-sear the meat first and braise it a bit before putting it in the crock pot, so it isn't as big a deal. I don't much mind soggy veggies anyhow.

If Im making a stew or soup I cook everything else all day and the veggies for only 2-3 of hours or YES, they will be soggy and nasty, especially the carrots, they don't take long to cook. 2 hrs is plenty for carrots

Crock-Pot or Slow Cooker meals are convenient, tasty & cheaper. You can prepare everything the night before, but keep in the frig. Start with root vegetables: potatoes, turnips, carrots, parsnips. Next layer should be for flavour: onions or leeks, & celery, etc. Meat is better tasting if browned first in some hot oil, or on a grill. It could be stewing beef, cut-up chicken, pork chops, sausages, etc. Add at least a cup of liquid: stock, wine, water, juice, etc. Set for 5-7 hours on Lo, or 3-5 hours on Hi, the longer the better. Add small vegetables like peas or corn in the last 15 minutes. Add pasta shapes or noodles in the last 10 minutes, if desired.

With using a crock pot for beef roast with potatoes and carrots and onions the carrots don't seem to get done enough for me. The potatoes and onions are done. I omit the carrots. You can put almost anything in a crock pot.

The carrots don't get soggy, in fact I have problem getting them done. Put them on the bottom. The potatoes put in about 3 hrs before done.

Of course you can. That is what they were designed for. However, your suspicions about soggy, "soft" veggies is correct. If you cook veggies as long as you cook the meats, they will soften.
On the other hand, they will be extremely tasty, soaking in the maximum amount of meat juices and flavors.

They would probably be too soggy as it takes the meat much longer to cook (if you're using meat). Otherwise, yes put them in but probably not for all day.

Cut it up in large pieces and as it cooks, the water is taken out of it into the broth making stews and soups really great to cook in a crockpot. Also, since it takes time, all the flavors go into the broth and your food (if you add spices) really comes out.

Yeah, and it's yummy. It depends on how long you cook them , but I've even put in canned carrots for up to 4 hours and they we still intact and delicious.
