80 proof is 40% alcohol. Proof is twice the alcohol percentage.

Most brandies are 80 proof or 40% alcohol.

Hmmm...thirty percent. I prefer to use sherry or vermouth instead of brandy for cooking. One type, St. Remy, is good with gingerale but I am not a fan of hard liquor except for Bacardi coco and vanilla.
