We don't. I would say that the best information we have regarding the various Christian/Jewish texts are those from professors who are considered experts in the field. They have spent years studying these texts from a non-objective (mostly) point of view and take historical content and fact into consideration when writing about or evaluating texts/gospels that have been foudnd.
Try Bart Ehrman, Karen King, Elaine Pagels - they are "heavy hitters" in the realm of early Christianity -their articles, books and commentary provide a wide array of information regarding the people who wrote the texts and what they consider to be truth and fiction regarding them.
As far as believing what was written -that you must take on faith alone.

Start with Lee Stroebel's book The Case for Christ. It's a good launching point if you're serious about learning more about the history of the gospels, the authors of the bible, etc.
Stroebel was a legal journalist who went on a 2-year journey to examine the evidence of God. I hope you find it at least informative, if not transformative.
After Stroebel, turn to Don Miller and Rob Bell. They've got a contemporary take on God without all the baggage that religion gives us.

They died for their convictions is a start. They had obviously seen something really convincing. As did many Christians to follow.
Some of the bible is literal Jewish history. Just as we have American history. Much of it is prophesy. Some 60 (major ones) were fulfilled with Jesus' first coming here. And more are to be fulfilled with His return.
Some of the bible is also wisdom that works really well when tried and applied. Truth and goodness never go out of style.

We don't know. That is what amazes me. We have absolutely no proof about who wrote it and how reliable of a source they truly were. People believe it based purely on faith I guess.
