replaced them with a Convection Oven, Stove Top only, and a refrigerator that is either drawers built in or a non-traditional fridge that is wider, narrower in it's depth and about 6' tall for easier access and to fit into a spot better? We want to change our kitchen to coordinates like above but need advice before we start.

I replaced my old stove with the convection oven/stove top combo. A couple of points:

1) The convection oven cooks so much faster, you really need to watch it when you cook things. We burned up a couple of pizzas and made some lumps of coal out of potatoes before we figured it out. A pan of water left in the oven helps to stop the food from drying out as it cooks!
2) The stove top we chose is an induction type, not radiant. It is very efficient, and it only heats when the pan is ON the burner. Don't use glass pans!
3) the refrigerator deal is a little more complicated. Mine was a homemade deal, I used insulated drawer fronts, and made the whole section behind the drawers refrigerated. The advantage is that all the cold does not come spilling out when you open it. Mine is a "chiller" type system, I circulate very cold water/antifreeze mix through a coil behind the cabinet, and the heat waste coil gets dumped outside. (I live in Arizona and the problem here is cooling your house, not heating) The freezer is one drawer with the cooling fluid circulating through an aluminum block in the bottom, connected with flexible tubing to the system. It works great, but I do have trouble with frost build up. The main advantage is the location of the drawars, everything is just under the counter (three refrigerated and 1 freezer) makes the kitchen function better.

We just built a new home. I chose a Microwave/Convection combo for my top oven and a Convection for the lower. The Micro/Con combo eliminated the need for a separate microwave taking up space yet I still have a double oven feature with the convection option on it. I have only had gas cooktops and love them plus you gain the additional cabinet space underneath. Do not put your cooktop on your island. It won't allow for you to do anything else with the island and no one wants to have a cocktail around the stove. I'm not sure what you are looking for in the fridge unless it's either the "french door" style or the built-ins to fit flush with the counters. I looked at the french door styles and decided I wouldn't like the freezer at the bottom. If you are looking for a built-in, realize they will be shallower and therefore not hold as much and space is always challenging inside refrigerators. I also looked at warming drawers until I realized that my convection has a warming feature. My appliances are all GE Profile and Monogram.
