Tuna steaks are extremely versatile--there's no end to what you can do with them. They're great on the grill, with a little marinade.

If you have high-quality tuna (like sushi grade), it's best pan-seared. One recipe I've come across called for breading it with crushed wasabi peas before cooking. Normally, I would *not* recommend breading a tuna steak, but this was amazing! Another interesting twist is to sear the steak on both sides, slice thinly, and serve over baby greens with straw mushrooms and a wasabi/soy vinaigrette.

For lower-grade tuna, I often poach it in wine. Put it in a saucepan, fill it with white wine to about halfway up the sides of the steak, and bring to a boil. Reduce to a simmer, and cook for about 5 minutes on each side (longer if you like it well done). I usually throw in capers and chopped shallots, and serve with a lemon-butter sauce and capers.

If it's high quality tuna, sprinkle it with kosher salt and pepper and sear it in a little olive oil. Only cook it to medium or it will get tough and loose a lot of great flavor.

Grilled on a charcoal grill or broiled indoors. I'm a real purist when it comes to tuna, it has the most delicious flavor and I would suggest just serving it with lemon.

grilling is best but i like mine pan seared

1 tbsp olive oil
1tbspoon butter
salt and pepper

heat oil and butter in pan...sear tuna for two minutes on each side..will be between rare and med rare...put on a plate and pour pan dripping over the tuna!!

there are variations of tuna nisswa. You can make it more like a salad depending on how you like your meals and still taste the nice, fatty tuna steak. you can find recipes on foodtv

We marinate it in Wasabiyaki (buy it at the grocery store) and then grill it rare. Yum. Had it last night!
