Yarithes Yiouvetsaki (Roasted Prawns with Fresh Tomatoes and Feta Cheese)

12 large prawns (U-10), in their shells
1/2 cup olive oil
1 medium onion finely sliced
Salt
Freshly ground black pepper
1 pound fresh tomatoes, peeled, seeded and thinly sliced
1 tablespoon chopped garlic
1 tablespoon chopped fresh oregano
1 cup dry white wine
Fresh Feta cheese

Preheat the oven to 400 degrees. Rinse the prawns in cold water and drain. Peel the prawns, leaving the head and tail intact, discarding the shells. Season with salt and pepper. Place the prawns in a large oven-proof baking dish. In a large saute pan, heat the olive oil. Add the onions. Season with salt and pepper. Saute for 3 to 4 minutes, or until translucent. Add the tomatoes, garlic, and herbs. Saute for 1 minute. Add the wine and bring the liquid to a boil. Reduce to a simmer and cook for 2 minutes. Pour the mixture over the prawns. Sprinkle the top with the cheese. Place in the oven and roast for 8 minutes. Remove from the oven and garnish with parsley.


Ziti Baked with Shrimp & Feta Cheese - Greek Style

2 Tbsp olive oil plus enough for coating your baking dish
1 onion, sliced thin
2 large cloves garlic, sliced thin
3 cups drained chopped canned plum tomatoes
2 tsp minced fresh oregano, or 1 tsp dried & crumbled
1/2 tsp dried red pepper flakes
salt & freshly ground pepper to taste
2 Tbsp minced fresh basil ( I need a dry substitute)
1 lb large shrimp, shelled & deveined
1/4 cup minced fresh parsley leaves
3/4 lb ziti, cooked & drained according to package directions
1/2 lb feta cheese, crumbled

Preheat oven to 400F. In a large saucepan set over moderate heat, heat oil until hot, and add the onion and cook it, stirring occasionally for 4 minutes. Add the garlic and cook for 3 to 4 minutes more, or until the onion and garlic are golden in color. Now add the tomatoes, oregano, red pepper flakes and salt and pepper to taste and simmer the tomatoes for 6 to 8 minutes, or until lightly thickened. Add the basil and shrimp and cook, stirring gently, for 1 to 2 minutes, or until the shrimp are just turning pink. Place cooked pasta in a large bowl, gently stir in shrimp and tomato mixture, 2 tablespoons of the parsley and half of the feta cheese. Transfer to an oiled 3 quart shallow baking dish and sprinkle with the remaining feta cheese and parsley. Cover loosely with foil, place in the oven and bake for 20 minutes, or until bubbling. Run under the broiler until golden.

Hot Pita breads.

Open up a pita bread and put a shallow bed of very finely shredded lettuce, a couple of thin slices of tomato, a few olives (make sure the stones are removed). This is your general base.
You now have a world of options:
sliced courgette and sweet-corn for the veggie
sardines for the fish-head
fried mince-meat for the beefeater
pretty well anything you can think of for the imaginative
anything you've got left over from yesterday for the penny-pincher
the list is endless...

now pour over a splash of virgin olive oil and the finely cubed feta cheese, and pop under the grill for two to three minutes.

Feta cheese is great with just olive oil drizzled over and maybe some olives and sundried tomatoes too with some fresh bread. If you wanna cook it then make a feta cheese and spinache pastry, really tasty, lots of recipes on line.

Besides putting it in Horiatiki Salata (Greek Villager's Salad), Garides Saganaki (Baked Prawns with Feta), Spanotyropita (Spinach Pie), to name a few, you can also prepare Feta Saganaki. Just simply dip the feta in beaten egg, coat with breadcrumbs and then deep fry it. Served hot with a slight drizzle of lemon juice and a sprinkling of paprika.

Feta is great in a variety of different items. But, its very pungent and salty, so a little goes a long ways! Here's what I use it for:

1. Pasta salad made with rotini, chunked salami, red bell pepper, chopped green onion, sliced black olives, feta, and 1 bottle Berensteins Cheese Fantastico Salad Dressing.
2. Spinach salad with mandarin oranges, bacon, and a dijon vinagrette.
3. As part of a stuffing for Chicken and Artichokes: Chicken breasts, split in the meatiest part, stuffed with chopped artichokes, feta, breadcrumbs, and parsley. Use the reserved artichoke liquid, mixed with a little white wine and dijon mustard to serve as a sauce (simmer and reduce first) for the breasts at serving time.
4. Mixed with ground beef, spinach, a sprinkle of cinnamon, sauteed onion, in pita or in macaroni.

Feta cheese is so beautiful - especially in Greek salad.
(A normal salad - lettuce, tomato, onion, etc. with feta cheese (A wonderful accompaniment to many dishes)

Try "feta cheese uses" in Goggle - you will get a plethora of applications. It really is delicious!

I have it weekly at our local Italian/Greek restaurant.

I love to make saganaki. It's a greek dish which involves coating the feta in a light batter then frying. Try with some nice crusty bread or fresh lemon squeezed over it.

i think fetas best on salad or an some eggs. good on pizza too, but not quite the same.

make an omelet, throw in some olives, cilantro, tomatoes and grind some black pepper over it. crumble some feta on to it. ive always been all crazy about avoiding veggies on my eggs but... this rocks. and it looks cool with all the color goin on. =)

pretty much any salads... just crumble some feta over it =D

make a nice salad with it.
wash and cut up some romaine lettuce, with some slices of cucumbers, a little tomato and some slices of red or white onion.
pour some oil over it ( 1- 2 tsp) and toss well, now add about 1 tsp vinegar and toss well, now add 1/4 tsp salt and toss well.
spread the feta cheese in little clumps on top and add some kalamata olives and presto.. greek salad.....
