The Ayers Rock, now called again Uluru, changes its colour because the reflection of the sun during sunset and sunrise.
The rock contains lots of iron which rusts in the rain. So what you actually see is the rust which shines in different shades.
It's amazing as I saw it in its different shades of red as well as in a golden colour during a frosty winter's morning sunlight when I was walking around the rock.
@ Scouse: On my very first visit (out of three) I also had the luck to see the rock's sunset with a thunderstorm around - no rain at all cause it was too hot and the water vanished in the air (so to speak) but with lots of lightning.
So, you really had been lucky.....

Ayers Rock (Uluru) is a huge mass of Sandtsone. It is 1142-ft (348 m) above a flat desert floor. It is sacred to the Aboriginals. Caves at the base are decorated with traditional Aboriginal paintings. At sunset, rays from the setting sun strike the rock and it glows to deep red. Midnight~Angel :)

my visit to Ayres Rock was during two of the 50 days rain they have each year. They tried to tell me I was privileged but seeing that in UK I get all the rain I want, I could not see the strength of their viewpoint. Another whinging Pom I suppose. Having said that the smell in the air was something to behold it was so pleasant and flowers were beginning to bud so there was some compensation for the disappointment. It did not change colour at all.

It doesn't, the sun makes it appear as though it changes colour.

It doesn't, it's just the light reflecting on it at different times of the day.
