Prize-Winning Meatloaf
Ingredients
Meatloaf ingredients:
1 1/2 lb Lean ground beef
1 c Tomato juice or sauce
3/4 c Quaker Oats
1 Egg, lightly beaten
1/4 c Chopped onion (optional)
1/2 tsp Salt (optional)
1/4 tsp Black pepper
Sauce ingredients:
1/4 c Catsup
2 tbsp Brown sugar
1 tsp Dry mustard
Preparation
Preheat oven to 350F
Combine all ingredients in a large bowl and mix lightly, but thouroughly.
Press mixture into an 8x4"pan.
Combine sauce ingredients and
Bake 1 hour or until meatloaf is to medium doneness and center is not pink. Drain at 50 minutes and pour sauce over top for the last 10 minutes.
Let stand 5 minutes before serving
Cook's Notes
Other add ins: 1/3 cup parmesean cheese, 1/2 cup frozen or canned corn, 1/2 cup chopped bell peppers, 2 tbsp finely chopped parsley or cilantro.

Here are two great meatloaf recipes: Meatloaf (this is aweseome) 1 lb of ground beef 1 stove top stuffing mix (chicken) Mix this together and add 4 tablespoon of ketchup 1 chopped onion… Top with cheddar cheese This is my mom’s meatloaf recipe Ground beef 2 eggs Ketchup 1 onion Bread crumb Mix the above Take half of the mixture and put it in a bread pan. On top of meat add mozzarella and salami (I have tried a variety of cheese and meats.. all good. Use what you like.) Then add the other ½ of mixture. This is a great stuffed meatloaf.

1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper
preparation 1. Heat oven to 350°F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan.
2. Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.
Servings: 8
variations Customize meatloaf by adding one of the following to meatloaf ingredients:
1/2 cup frozen (thawed) or canned (drained) corn
1/2 cup chopped green or red bell pepper
One 2-1/2-ounce jar sliced mushrooms, drained
1/3 cup grated Parmesan cheese
2 tablespoons finely chopped fresh parsley or cilantro
Sprinkle top of baked meatloaf with 1 cup shredded cheese. Return to oven for 3 minutes to melt cheese.
Spoon heated prepared spaghetti sauce, pizza sauce, barbecue sauce or salsa over each serving.

I split my meat half ground beef/ground turkey (husband is diabetic and heart patient.) Add one egg, about 3/4 cup oatmeal (long cook is best,) or rice if you prefer. Add chopped celery, onion, garlic, a little salt and pepper and some fajita seasoning if you have it. Form loaf in a double piece loaf pan so greases can drain. Make a slit from long end to end and fill with Worcester sauce. Bake at 375 for about an hour, or until brown in the center. Serve with homemade brown gravy, mashed potatos or new potatoes and snap beans. My family would not eat meatloaf with tomato sauce, so that is a personal preference.

Saucy meatloaf
1-1/2 pounds ground round
3/4 cup oatmeal
1/4 cup chopped onion
1-1/2 teaspoon salt
1/4 teaspoon pepper
1 egg beaten
3/4 cup milk
Sauce:
1/3 cup ketchup
1 tablespoon mustard
2 tablespoons brown sugar
Directions
Combine meat, oatmeal, onion, salt, pepper, egg and milk and mix thoroughly.
Pack firmly into loaf pan.
Combine ketchup, mustard and brown sugar and pour over meat loaf.
Bake at 350 for 1 hour.

Meat Loaf with a kick.
INGREDIENTS
1 (6 ounce) package corn bread stuffing mix
2 eggs, beaten
1 (4 ounce) can mushroom stems and pieces, drained
2 teaspoons garlic powder
3 pounds lean ground beef
2 (4 ounce) cans chopped green chilies
1/4 cup shredded Cheddar cheese
1/4 cup salsa
DIRECTIONS
In a large bowl, prepare the corn bread stuffing according to package directions. Add eggs, mushrooms and garlic powder. Crumble beef over mixture and mix well.
Shape into a loaf in a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 1-1/4 hours; drain. Top with chilies. Cover and bake 20 minutes longer or until meat is no longer pink and a meat thermometer reads 160 degrees F.
Sprinkle with cheese and top with salsa. Bake, uncovered, for 5-10 minutes or until cheese is melted.
