Every restaurant I've been to that serves barbeque food like ribs or chicken serves pickles with the meal. It's a nice color complement, but why always pickles?

Because the tart sourness is a nice accompaniment and contrast to the salty or smoked taste of many meats, and the sweetness of many barbecue sauces.
