I need some new ways to spice up Chicken, legs wings and breast's are all available (not all at once I"m on a budget here)

I grill, fry and bake them all, but I need new ideas for recipes (Sp) anyone?

mult recipies will result in best answer worthiness.

Chicken recipies it is:

Chicken Chow Mein or is It Chicken Chop Suey??

What's in a name...=) This recipe is an old favorite from my Mom. She called it Chicken Chop Suey and served it with Chow Mein Noodles. I don't know the difference...hence the name. Either way, I like it!

1 tablespoon canola oil
1/2 cup halved onions, sliced
4 stalks celery
1 cup of chopped napa cabbage
1 bunch scallions, chopped fine
1 whole skinnless chicken breast
3 cups water or chciken broth
1 (15 ounce) can bean sprouts
1 (8 ounce) can water chestnuts
Sauce
3 tablespoons molasses
1/2 cup soy sauce
1 tablespoon cornstarch
1 tablespoon flour

Pour oil into a preheat pan or wok.
Add onions and celery.
Cook until tender.
Stir in chopped cabbage and scallions and cook for one minute.
Remove vegetables from heat and set them aside.
In a large sauce pan under medium heat, simmer chciken in water/broth until thoroughly cooked.
Remove chicken from broth and set on a plate to cool.
When cool enough to handle, remove chicken from bone and chop into 1 1/2 inch pieces.
Add cooked vegetables and chicken to broth.
Add (drained) bean sprouts and water chestnuts to broth.
Sauce: Add all ingredients to a small bowl and whisk until smooth.
Add to chicken/vegetables.
Cook, stirring constantly over med/low heat until slightly thickened.
Serve over rice.
(Chop Suey?).
Or serve plain with crunchy Chinese noodles on the side.
(Chow Mein?).

This recipe makes HUGE burgers. Next time I will make them thinner/smaller. I did the patties on the Foreman grill. We enjoyed the flavors so much I'm making the burgers again this week, only I'm trying turkey, and bacos!


2 teaspoons vegetable oil or olive oil, plus more for drizzling
4 slices Canadian bacon
2 lbs ground chicken
2 teaspoons sweet paprika
2 teaspoons poultry seasoning
2 teaspoons garlic steak seasoning (Montreal Steak Seasoning) or salt and pepper
1 shallot, finely chopped
4 slices swiss cheese
2/3 cup mayonnaise
3 tablespoons Dijon mustard
2 tablespoons fresh tarragon, 4 sprigs chopped
4 kaiser rolls or English muffins, sour dough, split and toasted
8 leaves leaves lettuce
1 tomato, vine ripe, thinly sliced

Preheat grill pan, nonstick griddle, large nonstick skillet or table top electric grill to medium high heat.
Add 2 tablespoons of oil and Canadian bacon. Warm bacon and caramelize it at edges, 1 to 2 minutes on each side. Remove to a piece of foil. Fold foil over loosely to keep warm.
Pour olive oil on plate. Finely chop shallot (not too much shallot or too big, or the burgers will fall apart).
Combine chicken, paprika, poultry seasoning, grill seasoning, shallot.
Score meat with the side of your hand to separate into 4 equal amounts. Make 4 large patties, 3/4 to 1 inch thick. Drop each patty onto the plate you poured olive oil on and coat with oil and place on hot grill pan, griddle or in skillet. Cook 5 minutes on each side, until chicken is cooked through.
Top patties with reserved cooked Canadian bacon and Swiss cheese. Fold each slice of cheese in half to fit the burger. Cover loosely with tin foil. Turn off pan and let cheese melt, 2 minutes.
Combine mayonnaise (or reduced fat mayonnaise, eyeball it), mustard, tarragon. Slather bun tops or English tops with sauce. Place Cordon Bleu burgers on bun bottoms and top with lettuce and tomato. Put bun or muffin tops in place. Serve with fries.

Breast of Chicken Oaxaca - Fried Chicken in Chipotle Sauce

From the Cooking Light website - a lightened version of a decadent dish served at Casa del Sol in Ciudad Juarez, Mexico, just across the border from El Paso. You can also toss the pasta with fresh tomatoes, onions, garlic, basil and oregano, as they do at the restaurant.


Chipotle Sauce
1/4 cup hot water
1/2 teaspoon chicken bouillon granules
4 canned chipotle chiles in adobo
1/2 cup low-fat sour cream
1 tablespoon lime juice
Chicken
1 avocado, peeled, pitted and cut into 6 wedges
1 tablespoon lime juice
6 (4 ounce) boneless skinless chicken breasts
3/4 cup shredded asadero cheese or monterey jack cheese
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons flour
3 large egg whites, lightly beaten
1 cup seasoned bread crumbs
1 tablespoon vegetable oil
1 lb linguine (8 cups hot cooked linguine)
1/4 cup sliced ripe olives
2 tablespoons chopped fresh parsley

T prepare the sauce: Combine first 3 ingredients in a blender; process until smooth. Pour into a bowl; stir in sour cream and 1 tablespoon lime juice.
To prepare the chicken: Toss avocado with 1 tablespoon lime juice.
Cut a horizontal slit through thickest portion of each chicken breast to form a pocket. Stuff avocado slice and 2 tablespoons of cheese into each pocket.
Sprinkle chicken with salt and pepper, dredge in flour then dip in egg whites and dredge in breadcrumbs.
Heat oil in a large non-stick skillet over medium-high heat. Add chicken; saute 6 minutes on each side or until juices run clear.
Cook pasta per package directions, drain and toss with olives and parsley. (or toss with chopped fresh tomatoes, onions, garlic, basil and oregano, as they do at the restaurant.).
Place 1 1/3 cups pasta on each of 6 plates. Arrange chicken on pasta. Top with 3 tablespoons of chipotle sauce.

Chicken in Foil Triangles - Aka Twice Baked Chicken

I used to maintain a website called "Guide to Living Alone" which featured some good recipes for one person. This recipe is one I put together for my friend Ellen, because it was one of her favorite sidedishes at a Chinese restaurant we frequented. The little triangular foil packets of chicken were such a treat! If you double/triple/etc the recipe, it can also make good appetizers for a party, or even take-alongs for a picnic or potluck.

5 ounces can cooked white chicken meat
1/2 teaspoon chinese hoisin sauce
1 dash sugar
1/2 teaspoon soy sauce
2-3 dashes sesame oil, to taste
1/4 teaspoon roasted minced garlic (or garlic powder to taste)
2 teaspoons chopped green onions
1/2 teaspoon minced fresh cilantro
1 tablespoon minced water chestnuts (optional)

Mix together all ingredients.
Put into covered dish and put in fridge to marinate for one hour.
Preheat oven to 350 degrees F.
Wrap tablespoon sized portions in pieces of aluminum foil, either in triangular shapes or about 2 1/2-inch square.
Bake in 350 degree F oven for about 10 minutes.
Serve along with stirfry and rice, or as an appetizer.

BEST OVEN FRIED CHICKEN

1 cup crushed rice krispies
1/4 t. crushed thyme
1/4 cup grated Parmesan cheese
1/8 t. pepper
1/4 cup chopped almonds
2 T. minced parsley
1 t. salt, optional
1/2 cup butter
1/2 clove garlic, minced
2 ½ to 3 lbs. chicken pieces

Combine the first 7 ingredients. Melt the butter and garlic. Dip the chicken in butter then in crumbs. Place in baking dish and cook at 375 degrees for 1 ½ hours.

How about chicken tacos
chicken soup
chicken cutlet parm
And here are two of my recipes they are great

1 - 1/2 pounds bonless skinless chicken breast cut into bite size pieces then put them in a egg wash and bread crumbs and satue in a skillet with a little oil till browned and remove from pan then dice up an onion and 1 green bell pepper and sautee in the same pan then for about 7 minutes then add 1 can of mushrooms drained and add one bottle of bbq sauce and chicken back together cook till heated through and serve over some rice

Here is the other one

4 boneless skinless chicken breast cut thin then saute in a skillet with a little oil about 3 minutes per side then add 1/4 cup red wine, or red cooking wine or chicken broth and cook about 2 minutes then add 1 sliced onion to that and cook about 3 minutes then add one jar spagetti sauce and cook till heated through and serve over pasta

first brine your chicken in salted water. In a baking dish add your chicken sprinkle salt and pepper, add minced garlic some onions and about 1/2 cup or more orange juice to which you add a teaspoon of madras curry powder. cover and cook at 350 for about 1 1/2 hours. Really good.

Make some good old chicken and noodles, Boil your chicken and make some homemade noodles by mixing about 6 eggs and flour until your dough is stiff enough to roll out, then roll your dough up and cut into strips let the dough dry out on counter, take your chicken broth to a boil add noodles slowly and cook until tender. They have already made noodles in the freezer dept of your local store, that saves all the mess they are call Remes homemade noodles. You can mash some potatoes and put noodles and chicken over that. Good hearty meal, easy and cheap to make.

My husband makes killer chicken tacos. We saute it up in a pan on the stove and chop it up. Then mix with taco seasoning mix (one comes with the taco bell box and is great!) or they make a "Chicken Taco Seasoning" I think it is by McCormack.
Also, my mother in law and I made some chicken last night, using boneless, skinless breasts, as well as bone-in, skin on legs. Marinated in Paul Newman's Oil & Vinegar dressing, then cooked on the grill. Top it with an onion that was cooked on the grill with worchestire sauce and garlic wrapped in foil.

Dice up boneless/skinless breast (which you can get cheap by the bag in the frozen food section) cook them up in some olive oil and garlic, add some prepared pasta and veggies right to the skillet, toss and heat through. You can add a jar of Alfredo sauce if you wish.

or

Dice them up and add an envelope or two of taco of fajita seasoning, eat on tortillas with your favorite taco toppings.

or

Prepare some white rice, add some Cream of Chicken or whatever soup to it, add in diced chicken.

Or

Shred BBQ chicken up and eat on buns.

The first thing I want to tell you about chicken is have you ever heard of Chicken Taco's. All you do is take your left over fried chicken and shread it and use it just like the hamburger meat when you make tacos. It is great. I think I like it better that beef.

This does not have a name but I love to put chicken breast in my crock pot and cover it with cream of mushroom soup, add a little salt and pepper and let it cook all day. YES, YES it's all to pieces and is messy as heck but it taste SOOOO good. I just love it and so does my family. I think it's because it's so gooey good.

Anything stir fry is wonderful with chicken...I like to use chicken breast for this one. De-bone. Cut in small thin strips. I use Italian salad dressing. Since chicken does not take long to get done I usually cook the chicken until it is done and put it aside. I love to use snow peas, but they can be quite expensive so I don't use them very often. I buy the large bags of mixed frozen vegs. and add to the dressing and cook to the prefered crispness and add chicken. A meal ready to go. Add yellow rice if you like. Any veg. you like would work. Fresh or frozen. This is one of our best meals ever.

Hawaiian Chicken

1-3# cut up ready to cook fryer
1/4 cup melted butter
1-9 oz can pineapple slices (or chunks) I uses more
1/4 cup brown sugar
2 Tab. cornstarch
2 Tab chili sauce
1 tsp soy sauce
1 tsp salt
1/4 cup vinegar
1/2 tsp Worcestershire sauce
1/3 cup cat sup

In a shallow roasting pan, roll chicken in melted butter until well coated. Arrange pieces, skin side up, in a single layer in pan. Reserve 2 slices of pineapple for garnishing & dice the remaining. Mix the pinapple juice with the remaining ingredients. Add drained pinapple pieces. Spoon half over chicken. Cover and bake 350 degrees for 1/2 hour. Uncover & bake for 30-45 min. or longer till chicken is tender. Baste chicken occ. with sauce as it cooks. When done twist the two slices of pinapple (cut into) and place on chicken and serve.

Chicken and Cornbread Dressing
(GREAT FOR HOLIDAYS)
1 large hen or chicken
3 cups crumbled bread (day old)
6 cups crumbled cornbread (not sweet)
2 large onions, chopped
1/2 cup green onion tops, chopped
1/2 cup chopped bell pepper
1 cup celery, chopped
7 eggs (raw)
2 cups milk (I use evap. milk)
salt and pepper (I don't salt, I use chicken bullion cubes adds more flavor to broth.)
Preheat oven 375 degrees. Cook chicken until tender in seasoned water, then de-bone. In saucepan, combine 1 !/2 cups of the broth made from boiling chicken, onions, celery and green bell pepper and bring to a boil. Reduce heat and simmer until vegetables are tender. In large mixing bowl mix chicken, breads, broth/vegetable mixture: add eggs, milk and salt and pepper. Mix well and bake in a large, greased baking dish. Bake 375 degrees for 45 minutes or until knife comes out of center clean. Serves 10 - 12

Mama's Chicken and Rice

1/4 cup canola oil
1 chicken, cut up or pre-cut pieces
1 large onion
1 teaspoon salt
1/4 cup black pepper
2 cups raw rice
4 cups water

Brown chicken in hot oil. Cook until almost done. Add onions, salt and black pepper. Cook at least 5 minutes. Add rice and water. Cook until almost all liquid is absorbed. Cover and turn off fire. Let set for 10 minutes or longer. Stir and enjoy.

Quick Chicken Pie

1 large chicken (cooked and de-boned
1 large can mixed vegetables
1 stick margarine
1 can cream of mushroom soup
1 cup chicken broth
2 cups plain flour
salt
pepper

Preheat oven at 350 degrees. Melt margarine in a baking dish. Place chicken pieces over margarine. Add salt and pepper. Add mixed vegetables. Heat cream of mushroom soup with chicken broth until boiling. Add heated liquids to flour. Stir and pour over vegetables. Bake at 350 degrees until brown.

These are two that we like best but I have many more. I'll add later.
