Easy Chicken Piccata Recipe
To save time, measure the ingredients before you start and you can have this delicious chicken piccata on the table in less than 15 minutes. Serve with a savory couscous and quick microwave asparagus for a fast and easy meal.
INGREDIENTS:
4 chicken breast cutlets (about 1-1/2 pounds)
1 Tbsp all-purpose flour
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
2 Tbsp olive oil
1 Tbsp butter
1/4 cup white wine
1 Tbsp lemon juice (about 1/2 lemon)
1/2 cup chicken stock
1 Tbsp small capers, drained
PREPARATION:
Combine flour, onion powder, garlic powder, kosher salt, and black pepper. Sprinkle evenly on both sides of chicken cutlets.
Heat a large heavy skillet over medium heat until hot. Add the olive oil and swirl to coat the bottom of the pan. Add the chicken in one layer and cook on the first side for 5 minutes, until golden brown.
Turn the chicken cutlets to the second side. Add butter, white wine, and lemon juice, swirling around chicken to combine. Cook about 1 minute. Add chicken stock and capers. Cook another 1 to 2 minutes until chicken is no longer pink in the center (internal temperature should be 170 F.) and pan gravy has thickened.
Serve with pan piccata sauce over the top of the chicken cutlets.

Easy Chicken Parmesean
I love to make this recipe, because you can make part of it before hand and keep warm.
1-1 1/2 lbs. Boneless/skinless chicken ( or chicken tenders)
1 jar spaghetti sauce
1 lb uncooked pasta
1 cup parmesean cheese
2 cups motzarella cheese
1 cup bread crumbs
2 Eggs
2 Tbsp cooking oil
Take the chicken and cut into strips. In a bowl, combine bread crumbs and parmesean cheese (you can add salt, pepper, garlic salt or whatever you like to taste). Take the 2 eggs and whisk them. Take your chicken strips and dip them into the egg mixture, then put them into the parmesean cheese mixture. Heat the oil in the pan and add the chicken strips. Cook until golden brown. Take out of pan and place on a plate covered with paper towels.
Now the easy part. You can do the chicken a day before if you want. To make your meal, heat a pot of boiling water. Also, pour the jar of spaghetti sauce into a pot with a lid. When your date gets there, all you have to do is take the chicken, place it on a cookie sheet and sprinkle motzarella cheese over the top and heat it in a 350 degree oven for about 20 mins. Add the spaghetti to the hot water and heat the sauce. To serve, place spaghetti in a bowl or plate, top with sauce and 3-4 chicken pieces.
I know that it sounds like a lot, but if you do it, it's not that hard and it's chicken parmesean!! Hope it helps.

I'm a big fan of chicken stir-fry and it is really easy to make.
Ingredients:
2 chicken breasts
Teryaki sauce
A bag of stir-fry frozen vegtables
Soy Sauce
A bag of rice
Water
Directions:
Prepare rice as it says on the package (i think for 2 people its 1 cup rice and 1 1/2 cup water). Add a little butter or spray a pan with non-stick cooking spray and place on stove over medium-high, cut chicken into strips and place in pan pouring a little teryaki sauce over the chicken, cook completly. Put the chicken in a bowl and set aside, using the same pan throw the stir-fry vegtables in it and a little teryaki sauce or soy sauce cook until done then add the chicken to the vegtables and let stand over a low to medium heat for a few minutes. Arrange rice in the center of the plate and top with the chicken stir-fry mix. Voila your done. I like serving this dish with eggrolls or a salad topped with an asian sesame ginger dressing (available at most grocery stores) also keep soy sauce nearby if you want the extra flavor. Sorry I dont have exact measurements i have never measured this recipe since it is so easy I just add things until it tastes good.
Or if you want to go the italian route you could do a very easy chicken parmesian.
Ingredients:
2 Chicken Breasts
Pastsa noodles of your choice
marinara sauce
Mozzarella cheese
Directions:
Prepare the noodles as suggested on the package. In a small pan heat the marinara sauce. Grill the chicken. Place the noodles on the plate, place chicken on top of noodles, pour marinara sauce over chicken top with mozzarella cheese. Serve with a red wine, garlic bread or breadsticks, and a ceasar salad or salad with italian dressing.
Both are very easy to make and if you want exact recipes you can find it by googling it. These recipes are the easiest way for me to do it.

Below is a very delicious, and impressive new chicken dish I learned to make. I have made it for several friends and they loved it too.
Chicken Spinach Bake
2 Bags Baby Spinach
Sliced Black Olives
8 oz. Cream Cheese
1 Bag of 5 Italian Cheese
Cavenders Greek Seasoning
Italian Bread Crumbs
6 Boneless Chicken Breasts
Olive Oil
2 or 3 Tomatoes for slicing
Pour Spinach and Black Olives into 9 x 13 casserole dish. Take softened cream cheese, place on top of spinach and work it in with the spinach, crunch it, mixing well with your hands.
Season chicken heavy with the Greek seasoning, cover with bread crumbs and brown in olive oil.
Place browned chicken on top of spinach mixture.
Slice and season enough tomatoes to cover your dish.
Pour on the bag of Italian cheese.
Bake uncovered at 350 for 20 minutes.

2 easy to 2 true.
Buy two rock Cornish hens. Rinse and dry.
In a small bowl mix two table spoons of (Kosher) salt, a heaping table spoon sage, one of rosemary. Rub all together with the salt then rub in & out of the hens. Put on a rack and bake till done. Cover with foil for the 1st half hour / 45 mins then uncover.
When done - let rest some 10 munutes - cut in half and serve each of you one half. The 2nd bird is if you guys are still hungey if not you've got lunch for the next day.
Serve with boiled & then butter baby carrots & Brussels sprouts (find in the frozen foods aisle) .
Have a mixed green salad - toss some baked baked olives in.
Not sure what white wine to buy? Then buy some imported lager - serve in tall chilled glasses.

lemon roast chicken
Ingredients (serves 4)
2 large lemons
3 garlic cloves, crushed
2 tablespoons olive oil
1kg chicken nibbles (see note)
600g pontiac potatoes, scrubbed, cut into wedges
3 sprigs rosemary, leaves removed
400g steamed green beans, to serve
Method
Preheat oven to 200°C. Juice 1 lemon. Cut remaining lemon into wedges. Combine 1/4 cup lemon juice, garlic, oil, chicken, potatoes and salt and pepper in a large bowl. Toss to combine. Arrange in a roasting pan.
Place lemon wedges over chicken and potatoes. Sprinkle with rosemary.
Roast for 45 minutes or until chicken is golden and lemons slightly charred. Serve with steamed beans.
Notes & tips
* If chicken nibbles (also known as drummettes) are not available, you can use 1kg chicken wings instead. Cut wings at both joints and discard wing tips.
* To reheat this dish, place chicken and potatoes on separate baking trays. Reheat (chicken on top shelf) in 180°C oven for 15 minutes.
