You mean "will honey crystallize?"

From my experience, pure honey - the kind you get from a bee keeper will crystallize as it gets older. I suspect that part of the problem is that moisture evaporates out of it, although heating it will take it back to the previous state. However it will quickly re-crystallize again once it's done it once.

when the jar or bottle is left so air can get to the honey...it starts to dry it into sugar.....good luck
