Summertime goes hand-in-hand with outdoor entertaining and friends. These Old Glory Cupcakes are perfect for all the picnics, barbecues, and cookouts that summer has to offer.

Old Glory Cupcakes

1 cup sugar
1/2 cup milk-free, soy-free margarine, softened
3 T. applesauce, divided
2 tsp. vanilla extract
1 1/2 cups flour
1 3/4 tsp. baking powder
1/2 cup water

Preheat oven to 350 degrees. Line muffin tins with paper liners. Set aside. In medium bowl, beat sugar and margarine with electric mixer until well combined. Beat in 2 T. applesauce and vanilla extract. Beat in flour and baking powder. Stir in remaining applesauce. Stir in water until batter is smooth. Spoon into prepared muffin tins, 2/3 full. Bake 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool completely before frosting with Berry Topping.

Berry Topping

1 (1-lb.) box confectioners sugar
1/3 cup shortening
1/2 tsp. salt
1 tsp. cream of tartar
2 tsp. water
1/4 cup blueberry jam
6 strawberries, cut in 1/2 lengthwise

In medium bowl with electric mixer, combine all ingredients except for strawberries. Beat until mixture is smooth, spreading consistency. Frost cooled cupcakes. Top each cupcake with 1/2 strawberry.

Note: These cupcakes are very moist. Grape jam may be substituted for blueberry.

I would ask the teacher if anyone has allergies first. Most homemade cakes can be made for just about anyone, unless they are diabetic, or severe egg allergies. Some daycares/schools are actually forbidding parents from bringing in homemade treats, so best to check on that also.

Send in something nonfood related.
I would not trust someone who has no knowledge about allergies to bake something for my allergic child.
No way! Not worth the risk.

Donate a copy of your child's favorite book to the daycare.
