Yahweh? I mean, when your riding a horse or bull, all out, maybe its a cowboy thing to holler to Yahweh?

Actually, it comes from the term gee and haw, that means right or left to some farm animals. When a farmer had a horse pulling a plow, he would yell gee if he needed the horse to go left and haw if he needed him to go right. He was not riding the horse so he could not pull on the reigns. When cowboys were herding animals on the open plains, if they yelled gee or haw and any of the animals responded, then they knew they were domesticated and would cut them from the herd. The term Yee Haww was just a derivative of that expression.
