Well if you have a picky eater this could be a challenge I have little ones and they are underweight so I'm constantly struggling with loading them up on any kind of "good" calories.. and not sugary snacks/chips and burgers... Lately, I've been "hiding" fruits and veggies in their food.. I have a dynamite pancake recipie.. It's good for adults as well. They freeze well and there's no need for syrup.. I top the kids portion with a bit of jelly or I use them for peanut butter and jelly sandwiches...

2 cups bisquick or baking mix
2 eggs beaten
1 tsp cinnamon
1 tsp vanilla
1-2 tblspoons brown sugar
2 envelopes of instant flavored oatmeal I like maple/brown sugar made according to pkg. directions I use whole milk... Or 1 cup of quick cooking oats.... made according to directions set aside to cool...
either 1 really ripe banana or 1/2 cup of unsweetened applesauce... Omit any fat/oil in bisquick/baking mix recipe...

Mix together dry ingredients in bowl.. (cinnamon, sugar, baking mix)/ In another bowl beat 2 eggs, vanilla, banana/or applesauce add slowly cooled instant oatmeal or quick oats to temper.... Then fold into dry ingriedients: DO NOT OVER BEAT batter will be lumpy... Heat grill/griddle (greased)... Makes 8-12 good sized pancakes... freeze on a cookie sheet and place in zip loc bags...

*This recipie is loaded with healthy fiber and fruit from the applesauce it's easy to make and both children/adults love em !

I also "hide" babyfood puree in my children's mac n cheese and spagetti sauce.. Right now they are eating mac n cheese with some chicken n rice puree.. It's yellow like the mac. n cheese.. Or I'll add peas/carrots puree in the spagetti sauce for a veggie boost... My children also have CARNATION INSTANT BREAKFAST made w/ whole milk w/ a banana in it w/ ice in the blender..

Fruits and veggies are always a great choice. Kids eat fruits more readily because they do have natural sugar in them. Veggies can be more difficult, though if you offer the veggies with a low-fat dipping sauce, such as ranch dressing or peanut butter, it goes over better. With cooking, my trick is to get a food processor and put veggies into everything you make. When making meatloaf, mashed potatoes, pasta, etc....put bits of veggies in it. You can make this very small so that they barely see it in the food. Always have healthy snacks on hand to feed them so you dont revert to junk food. Though dont totally take away the junk food or they will try to sneak it or they may want it more! A little bit of something is never too harmful!

Raw or steamed fruits or vegetables.

Naturally, rather than artificially, sweetened foods.

100% juices.

Organic foods-they cost more but are worth it.

Food with as little preservatives as possible-fresh is best, then frozen, and canned is last. Pre-prepared foods such as Hamburger Helpers are horrible.

When using breads, use iron fortified and whole or multi-grain rather than white bread.

When choosing meats, choose lean cuts. Lean hamburger or any other meat is more expensive but worth it. Processed foods such as lunch meats, chicken nuggets, etc. are horrible. Try to avoid them.

When preparing foods, use as little butter and salt, etc as possible. Some fat is necessary for our body, but we tend to go overboard.

The "bad" stuff can be used, in moderation. Meaning a chip now and then is not going to kill you, so long as you eat healthy otherwise and get proper excercise.

Make sure they drink a lot of water-the majority of people are dehydrated and do not even know it. Drinks are probably the most unhealthy thing we consume-cut out Kool Aid, artificial juice, sodas, etc. Water, real fruit juice, milk are great.

Get the soft taco shells. Cut up an apple into slices. Cut the peel and core. spread peanutbutter on the taco shell. Then place the apple slices. Fold it up like a taco and enjoy.
Right there is a snack that's got fruit, protein, and grain. You can use other flat bread.
Kraftfoods.com is a wonderful website that gives great ideas for making all sort of snacks, meal etc.

Fruit and veggies with peanut butter or yogurt dip. Kids love to dip stuff. I don't know how old your kids are, but my 7 yro loves carrots, go-gurt, and cheese sticks. I noticed he likes veggies raw and will eat any fruit I put in front of him. Animal cookies are good and poptarts are a treat at our house. Hope this helps!
