You measure from the withers or shoulders.

If you don't have a wicket, you can place a level across his withers, hold it level, and have someone else measure to the bottom of the level to the floor or table top. Only a wicket and experience are accurate. The level method can be darn close.

While he is standing, measure from the floor to the top of the shoulders.
