No, but Humphrey Bogart did! He said it after he walks in and Ingrid Bergman already has Sam playing it against his wishes. He walks in and says, "Sam I told you never to play that..."
After they talk for a few she leaves and he tells sam to play it again. Sam doesn't want to, but (Humphrey)Rick Blaine says, "If you can play it for her, you can play it for me!"

Ilsa: Play it once, Sam. For old times' sake.
Sam: [lying] I don't know what you mean, Miss Ilsa.
Ilsa: Play it, Sam. Play "As Time Goes By."
Sam: [lying] Oh, I can't remember it, Miss Ilsa. I'm a little rusty on it.
Ilsa: I'll hum it for you. Da-dy-da-dy-da-dum, da-dy-da-dee-da-dum...
[Sam begins playing]
Ilsa: Sing it, Sam.

[Sees Ilsa. Sam closes the piano and rolls it away]
Later, after more dialogue between other characters, Rick returns to the piano and speaks to Sam.Here's the script for that bit.
Rick: You know what I want to hear.
Sam: [lying] No, I don't.
Rick: You played it for her, you can play it for me!
Sam: [lying] Well, I don't think I can remember...
Rick: If she can stand it, I can! Play it!
