My Father only likes fried chicken. I know there are a million ways to cook chicken and I'd probably eat just about everyone of them. What's a suggestion you could give me to get him to eat chicken that isn't fried?

Chicken baked in orange juice, garlic, onions and peppers. with salt, black pepper. Brine the chicken in salted water for at least 2 hours or overnight, place in baking pan, and add orange juice and the rest. cover with foil bake about 2 1/2 hours the last 20 mins uncovered and boom.....he will love it to death...add more juice if necessary......I also add hanabero peppers but that is very hot.......try it...

this is pan fried, but not deep fried. the parmesan gives it a great flavor and a nice crunchy exterior. you don't have to make the tomatoes, but it very compilentary with the chicken.

Parmesan Crusted Chicken Breasts with Tomato and Basil

1/8 cup tablespoons extra-virgin olive oil
Coarse salt and pepper
2 cups shredded Parmesan, available in tubs near deli -- make sure to get shredded cheese, not grated
4 (6 to 8-ounce) boneless, skinless chicken breasts
4 plum Roma tomatoes or small, vine ripe tomatoes, seeded and chopped
15 to 20 leaves fresh basil, pile leaves, roll then thinly slice -- chiffonade

Roll out a 2-foot piece of waxed paper or foil near the stove top. Heat a large nonstick skillet over medium high heat -- your pan must be very hot when the chicken is added. Pile the shredded cheese on the work surface created with the waxed paper or foil. Season your chicken breasts with black pepper but no salt; the cheese will add enough salt to the taste of the dish. Press the breasts firmly into the cheese. Coat both sides of breasts with as much cheese as possible. Add 1 tablespoon extra-virgin olive oil to the skillet, 1 turn of the pan. Set breasts into the skillet and cook 7 minutes on each side, until cheese forms an even, golden casing around the tender chicken breasts.

While chicken cooks, combine chopped tomatoes with basil in a small bowl. Season with salt and pepper, to your taste.

I make chicken enchiladas in the slow cooker. Just boneless skinless chicken, a couple cans of Rotels Mexican Festival (you can find it on the canned tomatoes isle) it has cilantro and lime juice in it, taco seasoning, garlic, a chopped onion. Cook it in the slow cooker a few hours until the chicken is falling apart 4-6 hours. Then roll in tortilla shells with cheese. It rocks!

Take bonless chicken

dip in egg

coat with potatoe flakes with garlic and peper

microwave alot of butter

and put coated chicken in casorel dish

drizzel the butter over chicken

cover and bake for 50 min on 350

after 40 min un cover for the remander of the 10 min left.

it's called baked Irish chicken.

The simplest alternative is just to coat it & bake it.
You can remove the skin to reduce the fat if you like.
Pour Shake'n'Bake in a plastic bag, add chicken & shake.
If you don't have the product, try the Bulk Food store.
Otherwise use cornmeal, or flour & poultry spices instead.
Arrange pieces in a baking pan, in 450F oven, 1 Hour.

Elegant Strawberry Chicken

2 tbsp. butter
2 lg. whole chicken breasts, cooked, de-boned, skinned, and cleaned
1/2 c. frozen strawberries, defrosted
4 pear halves
1 c. heated chicken stock
1 tbsp. cornstarch
2 tbsp. cold water
Salt and pepper
Few drops of lime juice

Heat butter in saute pan. When hot, add chicken and sprinkle with lime juice. Cover and cook 4 minutes over medium low heat. Season chicken and turn over; continue cooking, covered, 4 minutes. Turn again; cover and cook 8 minutes over medium low heat. Add strawberries and pears to pan; continue to cook 3 to 4 minutes. Remove chicken and pears from pan; set aside. Add chicken stock to liquid remaining in pan; bring to boil. Cook sauce 2 to 3 minutes over medium heat. Mix cornstarch with water; stir into sauce. Simmer 2 minutes over medium low heat. Correct seasoning and pour sauce over chicken and fruit.

keep him out of the kitchen when you bake it! and then if he asks how it was cooked change the subject, or tell him to try it and see how he likes it.
