My all-time favourite is Bean Salad!
There are a hundred variations for any occasion.
Select & open 3 to 5 kinds of beans:
Red Kidney, Chick Peas, Black Beans, etc.
Dump into a sieve or colandar & rinse with water.
Mix in a large bowl to blend the colours.
You can add kernal corn or canned mushroom pieces.
Choose an oil & vinegar type salad dressing.
Pour over enough salad dressing to cover &
marinate in the frig for 2 to 4 hours.

ITALIAN PASTA & BEAN SALAD WITH GARLIC VINAIGRETTE

1 pkg. Rotini pasta
3/4 c. olive oil,
1/3 c. red wine vinegar
2 cloves finely chopped garlic
1/4 c. chopped fresh parsley OR 1/4 tsp. dried parsley
1/4 tsp. black pepper
1 can cannellini beans, drained
1 can chickpeas, drained
1-1/2 cups roasted red pepper, drained and chopped
1 c. large black pitted olives, halved lengthwise
1/2 c. sliced green onion

Cook pasta according to directions on the box. Rinse with cold water. Place the pasta in a large bowl.

While pasta is cooking, prepare the GARLIC VINAIGRETTE as follows:
In a large bowl, stir together and the olive oil, vinegar, parsley, garlic and pepper. Pour over pasta. Toss the pasta with the vinaigrette and add the rest of the ingredients. Toss again. Season with salt and pepper to taste. Serve immediately or refrigerate.

Greek Salad

2 Tbs. McCormick® Gourmet Collection® Greek Seasoning
2 Tbs. fresh lemon juice
2 Tbs. white wine vinegar
1/2 C. olive oil
1/4 C. crumbled feta cheese
1 head romaine lettuce (or 8 C. mixed salad greens)
1 medium cucumber, peeled, halved, seeded and sliced
1/2 C. kalamata or black pitted olives, sliced
1 C. cherry tomatoes, cut in half
1/2 medium red onion, cut into rings

Blend together Greek seasoning, lemon juice, vinegar and oil in a bowl. Gently stir in cheese. Refrigerate 15 minutes or longer. Meanwhile, wash, dry and tear lettuce or salad greens into bite-size pieces. Place lettuce and vegetables in a large bowl. Just before serving, stir dressing pour over salad. Toss to coat. Garnish with onion slices and extra feta cheese, if desired.

I love making an antipasta salad. Toss a bag of chopped romaine with sliced pepperoni, salami, provalone and add some sliced red onion, pepperoncini, cherry tomatoes, roasted red peppers and quartered marinated artichoke hearts. Toss the whole thing with italian dressing and call it a day. Yum! I also do the same thing with pasta (like rotini) instead of the romaine.
