A nice thank you note and a gift basket (wine, cookies, whatever is his style) would suffice. Maybe a small wedding picture, but nothing too big...is he REALLY going to want a picture of his employee hanging on his mantle?

I think the best way to do show your appreciation would be to have him and his wife over as your first official dinner guests. Share photos of the wedding; let them see what a difference this gift meant.
You don't need to go insane making everything perfect; they should realize you're just starting out together. Being the first guests is a big deal, and a great way to honor them.

When you get back take him and his wife/date out for a really nice evening. Perhaps a show, dinner. Make sure to give them a HAND WRITTEN! Thank you Card. When you do get the money (probably from gifts at the wedding) your fiancee should offer to pay his boss back either in full or in installments.
I totally understand that flying is expensive and so is wedding planning but you CHOSE to have a wedding in Texas and your fiancee's supervisor just gave you a $1500 gift (minimum) which is way above the norm. Personally, I just wouldn't feel comfortable taking that and running off without attempting to pay him back in part.

i think of that any presents for the father and mom before your wedding ceremony are stupid - I propose in the event that they are procuring the marriage, what in the international are you going to purchase that could placed a dent in that? in case you're no longer paying why are you procuring them a present? i could only write each of them a heartfelt letter approximately particular they are to you. As a mom, i've got have constantly helpful those notes better than any present my boys would desire to ever purchase for me.

i agree on the thank you basket. i would add a picture of you two in a frame.
i would specialize/taylor it to their likes.
