Peanut Butter cookies

* 1 2/3 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup shortening
* 1/3 cup peanut butter
* 1/2 cup sugar
* 1/2 cup light or dark corn syrup
* 1 egg
* 1/2 teaspoon vanilla

PREPARATION:
Sift together flour, baking powder, and salt; set aside. In a large mixing bowl, beat together shortening and peanut butter; add sugar and cream until light and fluffy. Blend in corn syrup; add egg and vanilla and beat until light.

Blend in sifted dry ingredients, mixing well. Shape dough into small balls; place on greased baking sheets and flatten with tines of a fork. Bake at 375° for 10 to 12 minutes.

If you want you can also make an indentation on the top and put in some jam and have Peanut Butter and jelly cookies or also take two cookies and put a little smooth jam in the middle and make a sandwich out of it. Kids love this type of thing. You can also use crunchy or smooth peanut butter.

Hey!!! These are easy and I used to make them when I was a kid. They are great.

3-Minute No-Bake Cookies

8 tablespoons (1 stick) margarine or butter
1/2 cup low-fat milk
1/3 cup Baking Cocoa
3 cups Quaker Oats (quick or old fashioned*, uncooked)
In large saucepan, combine sugar, margarine, milk and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes, stirring frequently.
Remove from heat. Stir in oats.* Drop by tablespoonfuls onto waxed paper. Let stand until firm. Store tightly covered.
Makes about 3 dozen.

*If using old fashioned oats, cool mixture in saucepan 5 minutes.

1 box of instant white chocolate pudding
1 16-20 ox can of crushed pineapple with juice
1 8oz. brick of cream cheese softened at room temp.

Mix the first three ingredients and then fold in the cool whip. It is delicious as this or you could also put it into a grahm cracker crust. Chill and serve! Enjoy!

I would go with the pudding, it's easy and quick, And no hot water, where it could burn your child. Then again what is the occasion, is it for school. dinner, a sleep over? School peanut butter cookies. I don't know were you live but if for school, you have to buy things from the store, (that's the school rules were I live)

Well, there is always cheescake. All you have to do is get a all ready baked graham crust at your local supermarket and philadelphia crem cheese filling to put on the crust. You can top it with cheeries, bluberries, or strawberries. Remember, the kid needs adult supervision when putting on the filling or in case of any emergency.

Good luck! ;)
