Here's wallpaper that looks like paint peeling off of wood:

You might also look at some wall murals for a unique effect:

I love "castle view" or "Overlooking the Canal" for you.

sounds beautiful!!.... I'd suggest wallpaper... a nice old-fashioned looking floral.... in your choice of color... THEN... after it's up and dry and looking way too new.....get a glaze in an umber brown, dilute it to a tea color and start dabbing.... don't soak the wallpaper at all, just dab with a good sponge... give it the old, timeworn, slightly dirty, aged look.... try it on a sample board first, of course to see how much and if you like it....what would cause it?... smoke from candles, oil lamps, cigars, and the fireplace... so concentrate more on the upper areas of the walls... and paint the ceiling in a toned down eggshell or beige....

best way to learn how is to go to the hardware store.

you could also do a color wash.
you pick two colors, say a shimmery gold that is darker and a lighter tan color.
paint the gold on and let it dry
then with the tan color you paint over the gold then use a wet sponge and take off the color, not all the way just enough to show the gold in some places.
