Take a package of sausage. I like the Medium kind. Fry. Do not drain. Then remove most of the meat into a bowl. Take the remaining drippings and sprinkle in some flour. Stir continually. I would guess about 2-3 Tablespoons. Then slowly add milk. Stir continually with a wooden spoon. Add some black pepper. It should be thick and creamy. Now add back in the sausage. Yum.

Fry 1 roll of sausage (preferably spicy) in a skillet (NEVER nonstick). Break up the meat like ground beef, not in patties. Once cooked, remove the meat from the pan. Melt some butter (2 or 3 tablespoons) in the pan. Once melted, mix with plain all purpose flour (amount will vary) and whisk together until mixture is very thick (almost like a thick cornmeal batter). Add cream or milk (cream is preferred) until it is slightly thinner than you would like it. Add TONS of black pepper. Let cook for a few minutes until it is at the desired consistency. Mix the sausage back in the pan, and serve hot over fresh biscuits.

First brown sausage. I prefer spicy.
When done, drain on paper towels.
Leave grease and drippings in pan.
Add flour in an equal amount to the grease.
(Two tablespoons grease, two tablespoons flour-take some grease out if too much)
Turn heat on medium-med high and stir grease and flour constantly until it turns dark brown.
Next add milk, a about a cup at first, more if needed to get it the right consistency. Your gravy will be at its thickest when it reaches the boiling point.
Add your sausage back when gravy is the consistency you want.
