I have a huge crop of tomatoes this year and would prefer not to freeze them. Since I love sun dried tomatoes, I thought drying them would be a good alternative. Does anyone know how to dry them efficiently and safely? Also, is it possible to dry large heirloom tomatoes instead of the traditional small plum ones?

I do it all the time in the oven at a very low (200 -250 degrees) temp. Wash tomatoes, core and slice thin, place on large baking sheet, drizzle with olive oil, lightly salt and pepper. Bake about 1 1/2 to 2 hrs. Check often for desired doneness. I then place in a jar in the frig. until needed. Delicious & sweet, any tomato will do, even cherry or grape.

You can dry larger fruit like beefsteak and heirloom tomato - you just need to julienne them. If you have access to a dehydrator that would be easiest and the best result if not there are loads of oven recipes but you need to keep a close eye so you dry and don't cook. You can parboil and freeze them which is very effective too. Good Luck!

You can dry them in the oven at a very low temperature. Just make sure that all of the moisture is out of them. You should pack them in oil in jars and store in the fridge. I'm sure the large ones will be fine, you can just quarter them =)
