I made a double recipie and would like to freeze the extra mix. I would just bake the extra loaf and freeze that BUT I am making a zuchini and bananna bread at the same time and there aren't enough loaf pans or enough time to cook the other after the loaf pans are done being used.

No not the uncooked mix.
Try doing muffins with the mix.
The mix will be fine in the fridge for a day or 2 , can you cook later in the week?

I have frozen the baked loaves of both, but not just the batter. I don't see any reason why you couldn't freeze the batter. I also have few loaf pans, but I don't see why you can't just cook one, take it out of the pan, then cook the other. They are easily frozen cooked, by wrapping them in waxed paper, then foil. You don't need the pan to freeze it. If there isn't enough time to cook them both, the batter can be refrigerated until there's time to cook the other loaf.

i wouldn't freeze the unbaked stuff. i would just save the batter and bake it when you have a pan available. that can be freezed. i freeze my double loafs if i'm not eating them right away.

Yes you can freeze the mix but make sure that you use it up within a couple of months. Also when you do decide to take it out make sure you let it thaw out on its own....
don't try to defrost it fast...
It needs to thaw out on its own for the best results.

Yes you can you can freeze the dough and just thaw it out when you are ready to use it but thaw it in the fridge first though you can also do the same with cookie dough ...... good luck I hope your bread tastes great ......

yes you can for up to 3 months and it should retain good flavor. just wrap in clear wrap completely then in foil. or in an airtight container
