Tomato Pie
1 garlic bulb
3 T. olive oil
All-purpose flour for dusting
1 package of pie crust, or make one from scratch
6 oz. (about 1 c.) fontina cheese (or mozzarella), grated
3 lbs. firm ripe tomatoes cut into ¼-inch slices
Coarse sea salt and freshly ground pepper
Fresh basil leaves cut into very thin strips for garnish
Bake the garlic clove by placing on a baking sheet and drizzling with 1 T. olive oil. Bake at 350° for about 45 minutes. Remove the skins and put cloves in a small bowl and mash with a fork or spoon. Raise temperature in the oven to 450°. Lay out your dough over a 16-inch pie dish or use a cookie sheet pan. Let cool in refrigerator for about 15
minutes.
Spread the roasted garlic over the dough, add about half of the grated Fontina and arrange tomato slices so they slightly overlap. Season with the salt and pepper and the remaining 2 T. olive oil. Bake for 30 minutes. Reduce the heat to 350° and top with the remaining cheese and bake until the crust turns a golden brown. If the crust edge begins to darken too much, cover with tin foil. Bake for an additional 20 to 30 minutes. Pull from oven and let cool slightly, garnish with the fresh basil.

I use tomatoes all the time in tons of dishes, but this time of year my favorite is a quick & simple marinaded tomato side dish. Chop up tomatos into good size chunks & place in large bowl. Add chopped red or videlia onion then pour over your favorite bottled italian or vinagrette dressing - I like the Good Season's one that has garlic & feta cheese. Chill for a couple of hours, then serve with a slotted spoon.......Goes great with almost every dish!

My favorite comes from when I lived in Italy. It's called Caprese Salad. It is very simple, yet soooo delicious! You take equal amounts of 1" tomato chunks and fresh mozzarella balls (if you can find the mini balls those are easier), or just cut the mozz balls into 1" chunks. Drizzle with Olive oil and sprinkle with sea salt, fresh ground pepper, and fresh chopped basil. Toss everything together, then let it sit in your refrigerator for a half hour to let the flavors combine.
P.S. Be sure you use the fresh mozzarella balls which is sold in the liquid (whey) for the best flavor - discard the liquid for this recipe.

This is quick and easy and absolutly delicous! I love this dish so much!
INGREDIENTS:
2 medium tomatoes
Dijon mustard
salt
fresh ground pepper
ground cayenne pepper, to taste
3 tablespoons melted butter
1/4 cup seasoned fine dry bread crumbs
1/4 cup grated Parmesan cheese
PREPARATION:
Directions for quick broiled tomatoes.
Cut tomatoes in half; spread cut side with mustard and sprinkle with a little salt, pepper, and cayenne pepper to taste. Combine melted butter, bread crumbs, and Parmesan cheese.
